Normally, we can't see a laser beam "in mid-air" because the light is traveling in a straight line away from us. We only see the light when it hits a surface (like a wall) and reflects directly into our eyes.
In this demonstration, the teacher uses a diffraction grating or a specialized lens to split a single laser into multiple beams. To make the beams visible throughout the room, there are likely small particles in the air (like dust, smoke, or chalk powder). These particles catch the light and scatter it in all directions, allowing the students to see the "paths" of the beams as if they were solid lines.
