Basic vanilla cupcakes (12 cupcakes)
Ingredients
1¼ cups all-purpose flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup butter (softened)
¾ cup sugar
2 eggs (room temp)
1 tsp vanilla extract
½ cup milk
Instructions
Oven to 180°C. Line a cupcake tray.
Whisk flour, baking powder, baking soda, salt. Set aside.
Cream butter + sugar till light and fluffy.
Add eggs one at a time. Add vanilla.
Add dry ingredients and milk alternately. Start and end with dry. Don’t overmix.
Fill liners ¾ full.
Bake 18–22 mins. Toothpick = clean → done.
Cool completely before frosting.
Quick buttercream (optional but elite)
½ cup butter (soft)
1½ cups powdered sugar
1 tsp vanilla
1–2 tbsp milk
Beat everything till smooth and fluffy.
Notes (read this)
Overmixing = dense cupcakes. Stop when combined.
Eggs cold = weird texture. Don’t do it.
Want chocolate? Replace ¼ cup flour with cocoa + add 2 tbsp milk.
