Fresh green tea begins right from the garden, and timing is everything. Unlike black tea, green tea leaves need to be processed immediately after plucking because we don’t want oxidation to happen. The young tender leaves are first blanched in boiling water for about 30 seconds to stop oxidation and preserve their fresh green colour. After draining and air-drying for a while, the leaves are gently rolled using a bamboo mat several times, with resting and air-drying in between. This helps release the natural oils and shape the leaves. Once that is done, the leaves are slowly roasted on low heat until they are completely dry and ready to brew. The result is a beautifully fragrant cup of tea with a light yellowish colour, delicate flavour, and plenty of antioxidants and minerals. A simple cup, but a lot of patience behind it.
