2.5 years ago, I moved into my van🥹 While I had always seen the post on Instagram about how transformative living on the road could be, I didn’t believe it until I saw it for myself. Van life has broken me and also put me back together, I am not the same person I was when I first got on the road. That girl was scared, lacked confidence, and had no idea what she was doing with her life. Spend a cozy, rainy morning in the van with us☔️🌈⛈️ and happy public lands day! What a gift to be able to park up and enjoy places like this, let’s protect them🌲 here’s roughly how I made today’s soup: 1 yellow onion 3-4 carrots 4-5 celery sticks 4 cloves garlic 1 knob ginger 2 large boxes chicken/veggie stock or bone broth 2 chicken breasts 1 can coconut milk pasta of choice lemon salt pepper turmeric powder Chop onions, carrots, celery, garlic and ginger. Add to a large pot with oil. Sauté. Add broth and bring to a boil. Add chicken. Once cooked, remove and shred chicken. Add coconut milk and pasta. Allow pasta to soften and then add chicken, juice of 1/2 lemon and a few lemon slices. Add salt and pepper to taste and enjoy! #vanlife #vanliving #morningroutines #rainymood

Don’t tell the white walkers we’re here 🤫 Guess I can now check “camping by a glacier in summer” off my bucket list 😍❄️ Summer in Norway has felt a lot like winter to me and it’s not always been easy if I’m completely honest, but travelling to the Arctic and seeing glaciers for the first time in my life has honestly been so magical.
