I’m celebrating #Beansday with @humaneworldforanimals and making beans the main character #ad
Today’s swap is chickpea burgers. Chickpeas take the place of the meat entirely, with sun-dried tomatoes and smoky spices doing the flavor work.

Crispy potato veggie patties
Ingredients
3 large russet potatoes, shredded
2 large carrots
1/2 cup green onion, finely diced
1/2 small onion, grated and squeezed dry
4 tbsp cornstarch
4 oz sharp cheddar, shredded
1 tsp black pepper
1 1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp chicken powder
Salt to taste
Oil for frying
Method
Partially boil the potatoes and carrots for about 10 minutes, or until they are just half cooked. They should still be firm and not easily mashable. Drain and let them cool enough to handle. Grate them using the large holes of a box grater.
Add the grated potatoes and carrots to a bowl along with the green onions, cheddar cheese, cornstarch, salt, black pepper, garlic powder, and chicken powder.
Mix gently until everything is evenly combined. Don’t overmix or mash the potatoes you want to keep some texture.
Take portions of the mixture and firmly press into thin, round patties. Pressing them firmly is important so they don’t fall apart while frying.
Heat a generous layer of oil in a skillet over medium to medium-high heat. Once hot, carefully add the patties.
Fry for about 3–4 minutes per side, or until deeply golden and crispy. Don’t flip them too early let the first side form a crust before turning.
Transfer to a wire rack or paper towel-lined plate and serve hot with the spicy Kewpie sauce.

NO TIRES LOS TALLOS DE LA ESPINACA 🥬
•

Veggie Tofu Wontons in Chilli Sauce ✨
This one has a lot of stuff in it…but it’s very tasty! You can definitely cut it down to less ingredients in the dumpling filling
Ingredients
Half a cup of carrot
3 cups cabbage
3 tbs spring onion
1 garlic clove
3 tbs kimchi
1 tsp sesame oil
200g tofu

Salt & pepper
Sprinkle Chinese 5 spice
Wonton wrappers
Chilli Broth*
1/2 tbsp soy sauce
1 tbsp chili garlic sauce
1 tsp sugar
1 tbsp rice vinegar
1 tsp toasted sesame seeds
2 tsp sesame oil
1/2 cup wonton broth water used to cook wontons or hot water
*broth recipe from The Foodie Takes Flight
Gently fry the carrot, cabbage, spring onion and garlic until softened. Put them in a food processor with the rest of the filling ingredients and blend. I like to leave it a little bit chunky.
Mix the chilli broth ingredients together in a saucepan and bring it to the boil when you’re wontons are ready.
Place a small tsp of filling in the middle of the wontons. Wet the edges of the wrappers them fold over into a rectangular shape. Then pinch the inside corners and bring them together and press down firmly.
Boil a large pot of water and add about 8 wontons. They are ready when they float to the top.
Put them in a bowl and pour your chilli broth over the top.
