How I make venison for people who “hate” venison 🫡
1. Go for ground meat

Venison neck roast “torta”. Had to use ciabatta on the fly. Dipping sauce made with puya chiles, roasted tomato and braising liquid.
INGREDIENTS:
For the chile base:
* 6 ancho chiles, seeded, toasted and soaked
* 6 garlic cloves, chopped
* 1 teaspoon dried oregano
* ½ teaspoon dried thyme
* ½ teaspoon ground black pepper
* ½ teaspoon ground cloves
For the neck roast:
* 1 whole venison neck
* 1 large onion, sliced
* 3 large carrots, cut into 1-inch pieces
* 8 small Yukon Gold potatoes
* 2 quarts venison, chicken or beef stock
* Salt and pepper, to taste
* 3 tablespoons olive oil
INSTRUCTIONS:
1. Pat the venison neck dry. Heat the olive oil in a large skillet over medium-high heat. Sear the neck on all sides until browned.
2. Remove the seeds and stems from the ancho chiles. Toast them in a dry skillet over medium-low heat until fragrant, about 5 minutes.
3. Place the toasted chiles in a bowl, cover with hot water and soak for 15 minutes.
4. Drain the chiles, reserving the soaking liquid. Blend the chiles, garlic, oregano, thyme, black pepper and cloves with enough soaking liquid to make a thick sauce.
5. Place the onion, carrots and potatoes in the bottom of the slow cooker. Place the seared venison neck on top.
6. Pour the chile sauce over the neck. Add enough stock to cover the meat about three-quarters of the way.
7. Cover and cook on low for 10–12 hours or high for 8–10 hours. Flip the neck halfway through cooking and spoon some of the liquid over the top.
8. Cook until the meat pulls apart easily with a fork. Taste the broth and adjust the salt and pepper.
9. For the best flavor, let the neck cool in the cooking liquid, refrigerate it overnight and gently reheat it in the liquid the next day.
If you have a venison roast sitting in your freezer, make this next!
This venison barbacoa is one of our all-time favorite recipes. The meat cooks low and slow in a rich, flavorful broth made with warm spices, fresh citrus, and a splash of beer until it’s melt-in-your-mouth tender.
It’s easy to make in the oven, slow cooker, or on the stovetop, and it’s perfect for tacos, burritos, taco bowls, nachos, and more.

Next time you harvest a deer, make stock from the bones! I cut up nearly the entire skeleton, roasted it, then turned it into 3lbs of extra meat and 26 quarts of phenomenal bone broth for cooking stock. #venison #wildgamecooking #canning
