Homemade vanilla wafers with simple ingredients and the sweetest nostalgic flavor. Ingredients • 1 cup butter, softened • 3/4 cup cane sugar • 2 large eggs • 1 tablespoon pure vanilla extract • 2 cups all-purpose flour • 1 teaspoon baking powder • 1/2 teaspoon sea salt Instructions 1. Preheat oven to 350°F and line a baking sheet with parchment paper. 2. In a large bowl, beat butter and sugar for 2–3 minutes until light and fluffy. 3. Mix in eggs one at a time, then stir in the vanilla extract. 4. In a separate bowl, whisk together flour, baking powder, and sea salt. 5. Gradually add the dry ingredients to the butter mixture and mix just until combined. 6. Drop teaspoon-sized scoops onto the baking sheet and gently flatten with the back of a spoon. 7. Bake 10–12 minutes, until edges are lightly golden. Bake 1–2 minutes longer for extra crisp wafers. 8. Let cookies cool on the pan for 3–5 minutes, then transfer to a wire rack to cool completely.
