Libyan Aseeda
Recipe:
1:1 ratio of boiling water to flour
1 teaspoon of salt
2 tablespoons of oil
200g organic salted butter
1 jar of date syrup
Use a strong wooden spoon to knead the dough on the stove until smooth. You can use a food mixer. Add more water- roughly 1 cup and close the lid on it.
Leave to cook in boiling water for 20 mins then repeat the kneading. Make sure there are no clumps and when the dough is soft and stretchy, that’s how you know it’s done.
Plate up by adding melted butter first, then add your Aseeda and shape into a circle. Create a hole in the middle and add your date syrup.
Enjoy and Eid Mubarak 🌙🤍

Aaseedah
📍Saudi Arabia 🇸🇦
Aseeda or asida is a moist, pasty dough consisting of wheat flour or sorghum, water, yogurt, salt and sunflower oil that is then served with a variety of accompaniments, such as honey, butter, dates or even a savory version with meat stew, depending on regional preferences.
The dish is traditionally eaten without any utensils. Using only one's fingers, aseeda is eaten from one bowl and shared communally. When preparing the dish, one must be careful and stir it continually, so it doesn't develop any lumps. One of the earliest recipes for the dish was written in the 13th century, and today aseeda is eaten either for breakfast, dinner or during the traditional, festive ceremonies such as the aqiqah, celebrated by cutting the hair of a baby seven days after its birth.

Aseeda - عصيدة! Being one of the most ancient dishes to be recorded in books, it is eaten in various Arab cultures with various ways of making it.
The one above being a variation from Hadhramaut in Yemen is finely roasted, mixed, blended taking hours to perfect so that it melts right away in your mouth.

Honeycomb Date Aseeda Recipe 🇾🇪🐪🌴 || Simmering Memories {Ramadan Treats}
Aseeda is a dish I grew up eating during Ramadan with my Yemeni family. I soon learnt that it comes in various forms and varieties across Yemen all the way to Ethiopia. From savoury to sweet. Look a bit further and Yemen has an ancient connection with the coast of Africa and together were once the Kingdom of Sheba.
The exact identity of the Queen Sheba remains a mystery but more interestingly today’s infatuation with her race says a lot about our own prejudice and limiting racial “boxes”. Modern European paintings portrayed Sheba as white to reflect their own sense of “benevolence”, lol as always, but she really wasn’t… Closer to the truth were the Yemeni’s who called her Bilqis and Ethiopians who called her Makeda. Which one was she?
The reality is the kingdom Sheba spanned both Yemen and Ethiopia. So it’s impossible to say. However as a Yemeni, it’s important to acknowledge the Queen of Sheba’s Africaness also, and understand that the lines that define Arab and African have traditionally never existed. Afro-Arab identity speaks to an ancient common heritage where both are one. Like my own Yemeni family that settled in East Africa and inter-married. As an Arab to deny the African, would be asserting a deluded sense of ignorance, power and superiority over the actual beautiful truth we share.
The Queen of Sheba is moving because it speaks to a time where our simple notions of identity today did not exist. Afro and Arab are not mutually exclusive. But have a legacy as one. And it continues to thrive today.
