Today at work I decided to make a Shrimp, Cucumber and Avocado salad because I don’t want to be a fat ass anymore 😩😩😂 Follow the recipe below so you can make it too ⬇️ 6 persian cucumbers, sliced into coins 1 cup radicchio, chopped 1/2 red onion, finely sliced 1/2 cup parsley, finely chopped 1 cup cherry tomatoes, halved 2 avocados, chopped Dressing: 1/3 cup extra virgin olive oil 1 lemon, juiced (I used 2 lemons bc I love this EXTRA tangy) 1 tb sumac 1 tsp cumin (optional, but adds the best flavor) Salt & pepper (I used 1 tsp salt and 1/2 tsp pepper) Chop all of the salad ingredients and add them to a large bowl. Prepare the dressing. Pour the dressing on top and toss to coat well. Adjust salt and pepper as needed. ENJOY! This salad is best enjoyed the same day, but will keep up to 3 days in a covered container in the refrigerator. #healthymeals #salad #healthyliving #quickmeals
