Chicken Cutlets ~how my mama taught me~ INGREDIENTS - 3 (organic) chicken breasts - 1 cup of flour - 4 eggs - 1 cup of panko - 1 cup of breadcrumbs - 1/3-1/2 cup of parsley (minced) - 4-5 cloves of garlic (minced) - grated parmesan or pecorino - chili flakes (optional) - salt and pepper to taste - cheap light olive oil for frying (or any oil of your preference) METHOD - pat dry the chicken breasts - slice each breast into thirds or fourths (depending on how thick they are) - salt and pepper each side - place the sliced breasts on parchment paper with another piece on top. then pound them out until very thin - make your breading stations in three different baking trays - first station will have flour, salt, and pepper - second station will have 4 eggs (whisked), salt, pepper, and chili flakes (optional) - third station will have panko, breadcrumbs, parsley, garlic, grated parmesan, chili flakes, salt n pepp - dip cutlets in each station (in order) on both sides, pressing down when you get to the breadcrumbs - heat oil in a shallow pan (1/2 inch in depth) - set aside a large baking tray with a wire rack - when the oil is ready, carefully place cutlets inside (2-3 at a time) - when the cutlets have a golden edge, it’s time to flip - take cutlets out when golden on each side (I prefer when they’re slightly past golden) - serve with slices of lemon
Crispy Chicken Cutlets! Super easy way to elevate something simple like a chicken breast. These can also be baked if you don’t feel like frying! INGREDIENTS - for 2 servings 2 boneless, skinless chicken breasts Vegetable oil, enough to cover half of breaded cutlet in pan Breadcrumb Station: 2 cups Panko breadcrumbs 1/2 cup Parmesan, grated Salt and pepper to taste Flour Station: 1 cup flour 1/2 tsp smoked paprika 1/4 tsp dried oregano Salt and pepper Egg Station: 2 large eggs, beaten DIRECTIONS 1. Butterfly the chicken breasts - Slice the breast carefully in half, leaving room to keep breasts connected. See video. 2. Flatten chicken - Place butterflied breast between two layers of plastic wrap and pound to about 1/4 inch of thickness. *I used wax paper because it was all I had. 3. Breadcrumb station - On a plate, toss together breadcrumbs, grated Parmesan, salt, and pepper. 4. Flour station - Whisk together flour, smoked paprika, oregano, salt, and pepper and spread onto another plate or wide bowl. 5. Egg wash station - Crack two eggs onto a different plate, wide bowl, etc. Beat both eggs together. 5. Bread the cutlets - Dredge cutlet on both sides in flour, shaking off excess. Dip the cutlet in the egg wash, and then press the cutlet into the breadcrumbs. Let breaded cutlets rest while you prep the oil and frying pan. 6. Fry cutlets - Add in enough oil to pan to cover about 1/2 of the breaded cutlets. Once oil is heated and shimmering, gently place cutlet into oil. The cutlets will fry quickly due to how thinly we flattened them, maybe 2-3 minutes per side. Use a meat thermometer to help ensure you don’t over cook! 7. Remove cutlet from oil and rest on paper towel. #chickencutlets #breadedchicken #chickenrecipes #chickenrecipe #cooking
Full recipe 👇🏽🍗🍋🌱 • 4 chicken cutlets (about 1 lb in total) • salt and pepper • flour for dredging •1/4 cup olive oil • 1/2 cup of cold unsalted butter, cubed • 1 shallot, finely minced • 2-3 cloves of garlic, finely minced • 2 cups white wine • juice and zest from half of a lemon • 1/4 cup capers. I like @mlordfineproducts • 1/3 cup parsley, finely chopped 1️⃣ season cutlets with salt and pepper, then dredge them in an even coat of flour. Lay into a large pan with olive oil over medium heat. Allow to brown undisturbed for 4-5 minutes. 2️⃣ flip cutlets and toss in half of your butter cubes. Allow the butter to brown as the cutlets finish cooking. Remove cutlets and set aside. 3️⃣ add shallots and garlic while monitoring the heat and allow the butter to keep browning. Once the butter is browned sufficiently, deglaze with white wine, a little bit at a time, while stirring to emulsify. 4️⃣ allow the alcohol to cook off of the wine (2-3 minutes) then add lemon juice and zest, as well as capers. Turn off the heat and start swirling in the remaining cold butter to thicken the sauce. Finish with parsley then nestle the cutlets back in. Serve and enjoy! #recipe #cooking #chef piccata
Recipe 👇 Chicken Cutlets Seasoned breadcrumbs or use your own seasonings 2 eggs whisked 1/2 grated parmesan cheese, add to breadcrumbs Dip chicken in egg wash, followed by breadcrumb mixture Heat air-fryer to about 400, I used my oven air fryer setting but you can cook these in standard air fryer, temperature varies. Tips:I would use higher temp for thin and lower for thicker cutlets:) Spray chicken with cooking spray, Bake about 7 minutes per side. Add your favorite sauce, i used Michaels of Brooklyn Tomato Basil. Add fresh mozzarella cheese, Basil or Parsley if you like. Bake until cheese is bubbly and got a nice color. Meanwhile cook pasta if serving, add same sauce and serve with grated parmesan. Enjoy!
Chicken cutlets are an art 😎 My tips: Pound your chicken super thin, no one likes a fatty cutlet Use a mix of breadcrumbs, panko & Parmesan cheese You don’t have to use flour but you totally can if that’s what you’re used to! Season everything!! Chicken, egg & breadcrumbs Fry over medium heat a few minutes per side, to get them golden brown! If you like a darker cutlet then spoon some of the oil on top to get alll the breading coated Enjoy them hot or cold! I prefer them cold hehe #cooking #chickencutlet #cookwithme #cookingtips #italianfood
Some nights I feel wildly creative in the kitchen. Other nights I just want to cook something that makes me feel like I tried. Enter: crispy chicken cutlets. Thin. Fast. Crispy. Weeknight legend. These hit our table at least once a week in some form — piled with arugula for a quick Milanese, covered in sauce and cheese for parm, sliced onto salads, tucked into sandwiches… or just eaten straight off the cutting board like a crunchy reward for being a functional adult. They’re simple. They’re reliable. They make your kitchen smell like you absolutely know what you’re doing. Because sometimes dinner doesn’t need to be groundbreaking. It just needs to be crispy.
