INGREDIENTS:
4 red bell peppers, roasted and peeled
1 medium red onion, chopped
3-4 cloves garlic, minced
1-4 red chillies or piri piri chillies, chopped
1/4 cup lemon juice
1/4 cup apple cider vinegar
2 tablespoons smoked paprika
1 tablespoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 teaspoon salt
1 tablespoon olive oil
1 tablespoon brown sugarâ
1/4 cup water
Small bunch of coriander or cilantro
RECIPE:
1. You can either preheat your oven to 390°F (200°C) and roast the red bell peppers for about 25-30 minutes until the skins blister. Alternatively, you can carefully char the them on an open flame! Once cooled, peel off the skin and roughly chop the peppers.
2. In a blender or food processor, add the roasted red peppers, onions, garlic, chopped chilies, lemon juice, apple cider vinegar, smoked paprika, cumin, oregano, salt, pepper, and brown sugar. Blend until smooth.
3. Taste the sauce and adjust salt, sugar, or vinegar to get the balance right for your preference. If itâs too thick, add more water as needed.
4. Let the sauce cool, then store it in a jar. It will last for about 2 weeks in the fridge.

CHILLI OIL đĽ This condiment is perfect for dumplings, noodles, stir-fries, curries, eggs â just about anything!
- 2 tbsp spicy chilli flakes
- 2 tbsp korean chilli flakes (gochugaru)
- 1 1/2 tbsp sesame seeds
- 1 tsp salt
- 1 tsp sugar
- 1 tsp Sichuan pepper
- 1 tsp Chinese five spice
- 1/2 tsp white pepper
- 500ml neutral oil
In a heatproof bowl (ceramic or oven-safe is best), add all the ingredients except the oil.
In a small saucepan, heat the oil until itâs hot (100-110°C). Make sure it doesnât start smoking. If it does, turn off the heat and let it cool slightly to avoid burning the spices.
Carefully pour the hot oil over the dry ingredients in the bowl. It will sizzle, so be cautious. Stir gently, then let it cool.
Once cooled, transfer the chilli oil into a jar with a lid. Store at room temperature in a cool, dry place. Always use a clean spoon to scoop out the oil to keep it fresh. It will last 3-6 months.
