Cream cheese and butter have different water amounts. Butter has much less water than cream cheese and water and fat don’t like each tiger. Enter milk powder. It helps soak in the water from the cream cheese so everything whips up nicely. It also make things super creamy texture and flavor wise. What is cornstarch doing in custards? In custards like this orange curd the cornstarch thickens through a process called “gelatinization” When the custard heats up to around 160–180°F, the starch will begin to absorb liquid, the product will swell, and release starch molecules. This creates that smooth, thick, glossy texture you want in curd. Does it create sugar in custards? No; however the sweetness is still coming from the sugar you added in the recipe and the natural sugars in the fruit; fructose. The starch itself is not converting into sugar during normal custard cooking. Subtle effects on sweetness perception occurs which is why people think cornstarch is becoming sugar. Thickened mixtures coat your tongue differently; which in turn make flavors including sweetness feel more pronounced on the palette. So it feels sweeter—but chemically, it isn’t. Practical pastry tips: Fully cook the starch→ If not, you’ll get a chalky or floury taste→ Bring it just to a gentle boil for a consistent 2-5 minutes or depending on what the recipe requests. However Don’t overcook too long after thickening→ Prolonged heat can start to weaken the gel (especially with acid) Cornstarch gives a cleaner set than flour→ more translucent, less heavy in density For this particular recipe there are no eggs and we are folding in heavy whipped cream; making this curd into a fruit mousse or better known as a “Fruit Creme” The recipe will be provided on our YouTube Page during the long form video of “Leu Gardens Mary Jane’s Famous Orange Cake” Episode stay tuned for it to post.
