This was my éclair exam, and as you can see in the video, I messed up twice. First, I piped on my template with sharpie lines all over it. Second, I didn’t make sure my parchment was stuck down to the sheet pan. Easy fix would have been using a little bit of my pâte à choux to glue the corners down. I got lucky the éclairs had enough weight to hold it in place 😏. But in all seriousness, I got lucky as that would’ve messed up the baking process if they started flying every where. Overall though, I was actually happy with my piping. I remembered to stay about half an inch above the parchment so the éclairs would be more elevated and thicker compared to my previous batches. I also made sure to cook my pâte à choux long enough to see a thin skin form on the bottom of the pan, which is how I know it is ready to mix.
