Flapjacks ❤️ my forever favourite easy traybake. These take just 5 minutes to prep & throw into the oven. Our dad was a huge flapjack fan, they were one of his favourite treats ❤️ I made countless batches for him over the years & whenever I bake them now it will forever remind me of him.
I kept these plain & simple for ease but you can add chocolate to top if you like. Just add some chocolate buttons to the top when just out of the oven, leave to melt & spread if you would like a chocolate topping.
Makes 16
8x8 inch square tin, lined & greased
320g oats
200g butter
150g caster sugar
50g light brown sugar
1 tsp vanilla extract
Pinch salt
1 tbsp golden syrup or honey
1 tbsp flour
Optional:
100g milk chocolate, melted
Flaky sea salt
Preheat oven to 170 degrees c fan. Melt the butter in a large pot. Once melted, whisk in the sugars, vanilla, golden syrup. Add in the dry ingredients and stir until well combined. Pack tightly into the prepared tin and bake for approx 16-20 mins until golden brown. Let set for 2-3 hours, slice & enjoy! If you’re using the topping, dip half of each square into melted chocolate and sprinkle with a little salt. Let set & devour 😋
Will keep in a sealed container for upto 2 weeks.

Add a festive twist to your flapjacks with this recipe from @mattaroons 🎄🥣
What are you baking for Christmas day? ✨
When life gives you oats, strawberry jam and cornflakes... make cornflake tart flapjacks!🍓
Ingredients-
• 210g Unsalted Butter
• 200g Light Brown Soft Sugar
• 200g Golden Syrup
• 400g Porridge Oats
• 80g Plain Flour
• 1/2 Tsp Salt
• 1 Tsp Vanilla
Cornflake Layer-
• 200g Condensed Milk
• 30g Golden Syrup
• 20g Caster Sugar
• 100g Unsalted Butter
• 110g Cornflakes
• 200g Strawberry Jam
Instructions-
1.Preheat the oven to 160°C fan / 180°C / 350°F / Gas Mark 4. Grease an 8-inch square baking tin with a little butter and line with baking paper.
2. Add the porridge oats, plain flour and salt to a large mixing bowl and stir to combine.
3. In a saucepan over a low heat, gently melt the butter, golden syrup, vanilla extract and light brown soft sugar. Stir occasionally until the sugar has completely dissolved and the mixture is smooth.
4. Pour the melted mixture over the oats and stir until everything is evenly coated.
5. Transfer the mixture to the prepared tin and spread into an even layer. Use the back of a spoon or a silicone spatula to press the mixture down firmly. This will help prevent the flapjacks from crumbling.
6. Bake for 25–30 minutes, or until golden brown. The flapjacks will still feel soft when they come out of the oven, but they will firm up as they cool.
7. Leave the flapjacks to cool for 15 minutes before making the topping.
8. For the caramel cornflake layer, add the butter, golden syrup, condensed milk and sugar to a microwave-safe bowl. Microwave in 30-second bursts, stirring thoroughly after each minute, until the mixture has thickened. This should take around 5 minutes in total.
9. Stir the cornflakes into the caramel mixture until they are completely coated.
10. Spread the jam over the cooled flapjacks, then spoon the caramel cornflake mixture on top. Gently press it down into an even layer.
11. Place in the fridge to chill for 2–3 hours, or until completely set.
12. Once chilled, carefully lift the flapjack out of the tin and cut into squares using a sharp knife. Allow to come to room temperature before serving.

They still don’t know 🤫
And flapjacks are not pancakes ok? Love, the UK (who invented this language 🤪)
Anywayyyy I couldn’t believe how just easy, delicious and fun this one was! Packed with goodness and great for your skin, but also just so tasty too 🥰
Let’s go..
Here’s how 👩🍳
🔹1 sweet potato
🔹1/2 cup oats
🔹2/3 cup chocolate, plus 1/3 cup for the topping (I used @rawhalo buttons)
▫️roast your sweet potato until soft (about 1 hour at 200C), then carefully slice open while hot
▫️add in the chocolate, then squeeze potato around the chocolate and leave for 5 minutes
▫️add in the oats, then mash the now melted chocolate and the sweet potato flesh and oats together and mix well
▫️bake at 200C for 15-20 minutes, then cool
▫️pour oh the extra chocolate and chill in the fridge until set, then enjoy! PS to make the chocolate more fudgy I like to stir in either a tbsp of coconut oil or peanut butter.
Love, Mrs H xx

Budget friendly snacks?!!
Making flapjacks just feels like a moment of nostalgia for me! I remember my mum saving the syrup tins and attaching string to make them into stilts for us 😂
These also freeze really well! Make a double batch and freeze half for a busier week 🙌
I’ve kept mine plain, but you could also add chocolate chips, dried fruit or even nuts and seeds.
Quick, easy, and budget friendly - perfect for a low spend month!
