Tropical Fruit Ice Pops 🌴☀️🍓
Makes 8 popsicles
The ultimate refreshing summer treat — fruity, hydrating, and naturally sweet ✨
Ingredients:
• 1 cup mango, diced (165 g)
• 1 kiwi, diced (75 g / ½ cup)
• 1 cup strawberries, chopped (150 g)
• 1 dragon fruit, diced (230 g / 1½ cups)
• ½ cup blueberries (75 g)
• ½ cup raspberries (60 g)
• 2 cups coconut water (480 ml)
Instructions:
1. Cut all the fruit into small bite-sized pieces.
2. Fill the popsicle molds halfway with mixed fruit.
3. Pour coconut water until the molds are half full.
4. Add the remaining fruit and top with more coconut water.
5. Freeze for at least 6–8 hours or overnight.
So refreshing, juicy, and perfect for hot summer days 🍧✨

I was live on the national radio this morning talking about homemade ice cream (made the fruit and yogurt) and homemade ice pops like these. They are always worth the effort and my kids love them.

Healthier Homemade Magn*ms - makes 4
For the ice pops:
1 cup frozen or fresh strawberries (150g) @aldi_ireland
½ cooked beetroot (optional)
1 small banana
200g greek or plain yoghurt @glenilenfarm
Dash of honey or maple syrup
1 teaspoon vanilla extract
To coat the ice pops:
400g milk chocolate @droetkerbakingireland
2 tablespoons coconut oil - @frontier_foods
(This is a lot of chocolate but it’s needed to coat the ice pop fully. I used the leftover chocolate to make a few rice krispie buns.)
Step 1: Get your ice pop moulds ready and put them on a tray-this way they are easier to put in and take out of the freezer.
Step 2: Blend the ice pop ingredients until really smooth. Spoon into the ice pop moulds. Freezer until solid, at least 4 hours.
Step 3: Melt the chocolate and coconut oil in a bowl (I melt mine in the microwave, checking every 30 seconds) transfer into a glass, dip the ice pops one at a time.
‼️Important: Work quickly and dip the ice pops in the chocolate to coat. The ice pops can start to melt and the chocolate cools quickly as it becomes trickier. Lay flat on a tray.
❄️Storage: If not eating straight away place in a food safe bag, put them in the freezer they will keep for 3 months.

RAINBOW ICE POPS 🌈
I remember being obsessed with ice pops when I was a kid and popping to the newsagent across the road after school to buy as many as I could. Now Maya is totally infatuated too so I made it my mission to recreate these wonders at home. Using natural ingredients and no nasties these are the colours of the rainbow. I simply freeze them in reusable ziplock ice pop bags et voilà
For the red 🍓
Blend ½ cup strawberries + ½ cup coconut water
For the yellow 🍍
Blend 2 rings of tinned pineapple + ½ banana + ¼ mango + ½ cup pineapple juice
For the pink 🥥
Blend ½ cup raspberries + ½ cup plant-based yoghurt + ¼ cup coconut water
For the green 🍃
Blend 1 cup spinach + ½ banana + ½ cup mango + ½ cup orange juice
For the orange 🍊
Blend 1 orange + ½ cup orange juice
For the purple 🪻
Blend ½ cup blackberries + ½ cup coconut water + ¼ cup plant-based yoghurt
For the blue 🍌
Blend a pinch of blue spirulina powder + ½ banana + 2 rings pineapple + ½ cup pineapple juice

1 1/4 cups Florida Orange Juice
1 cup mango, fresh or frozen
Chamoy, for layering and topping
Tajín, to taste (optional)
Directions:
1. In a blender, combine Florida Orange Juice and mango. Blend until smooth and fully combined.
2. Spoon a small amount of chamoy into the bottom of each popsicle mold.
3. Pour the mango-orange mixture over the chamoy, filling each mold.
4. Sprinkle Tajín on top (optional), then insert popsicle sticks.
5. Freeze overnight or until completely solid.
6. Once frozen, remove from molds and drizzle with extra chamoy and Tajín as desired.
