Qurut (Kashk, Chortan, Aaruul, Khuruud, Aаруул, Xурууд...)
📍Mongolia 🇲🇳, Iran 🇮🇷, Kazakhstan 🇰🇿, Kyrgyzstan 🇰🇬, Turkiye 🇹🇷
Video: @qurt.taw
Qurut (known by various names in different countries) is a multi-ethnic delicacy made by drying and fermenting yogurt, which is then usually crushed and used in a variety of ways. It is characterized by its unique, deep flavor similar to the ones found in mature cheeses. Qurut is often added to soups and stews in order to thicken them and enrich their flavors. It can also be consumed on its own or dissolved in water.

Hot take, the best way to eat eggplant is in a dip.
This is a riff off of Iranian Kashke Bademjan. Traditionally it’s made with kashk, a fermented dairy product usually made of whey or yogurt that comes either dried or in a liquid form. I couldn’t get my hands on any so I subbed in some Greek yogurt but be sure I will be making this again and will find kashk when I do.
Ingredients:
2 large eggplants, skin removed and sliced into strips
5 tbsp neutral oil (vegetable/canola/sunflower)
1 yellow onion, sliced
3 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
2 tbsp dried mint
1/2 cup liquid kashk or greek yogurt
1/4 cup walnuts, crushed
Fresh mint to garnish
Preparation:
1. Peel eggplants and slice into 1/2 inch strips. Salt the eggplant and let rest at least 20 minutes.
2. In a large pan or pot on medium heat cook eggplant in 2 tbsp neutral oil, working in batches to not overcrowd the pan, until lightly browned on both sides and tender. Add additional 2 tbsp neutral oil when adding new eggplants to the pot as needed. Remove from heat, clean pot and place on paper towel lined plate to drain any excess oil.
3. In same pot on low - medium heat, add 1 tbsp of neutral oil and add onions. Cook onions, stirring often, until caramelized. About 10-15 minutes. Remove from heat and set aside.
4. In same pot on medium heat, add olive oil and mint and cook until fragrant, about 2 minutes. Add in garlic and cook for an additional 2 minutes.
5. Add in eggplant and 1/2 of the caramelized onions and reduce heat to low. Cook mixture stirring often until eggplant easily starts to break down and homogenous mixture forms, about 10 minutes.
6. Remove from heat and let cool slightly and stir in yogurt or kashk.
7. Garnish with remaining onions, walnuts, and fresh mint.

Hidden in old Persian manuscripts, ash (āsh) was more than soup — it shaped the word ashpaz (آشپز), meaning cook.
The classic Ash-e Reshteh slowly simmers fresh herbs, beans, and lentils with reshteh noodles, then gets finished with crispy fried onions, dried mint, and kashk (fermented whey) for that unmistakable tangy depth.
Traditionally made in big pots and shared with neighbors, it’s a dish of generosity still celebrated today.
Which would you add more of — herbs, kashk, or crispy onions?

Ever heard of Kashk?
It’s a traditional Persian whey protein, separated from milk curds during cheesemaking, and it’s what gives certain dishes their signature richness.
We source it directly from Iran, staying true to the flavours that define Persian cooking.

Today we’re making a traditional Iranian Luri dish called Doova (Doogh Rice) — a creamy and aromatic meal made with rice and thickened yogurt drink (Doogh).
Cooking Steps:
1️⃣ Add rice to boiling water with a pinch of salt and turmeric.
2️⃣ While it cooks, grind dried kashk (fermented yogurt) until it becomes a smooth, thick liquid — this creates a soft, creamy Doogh.
3️⃣ Strain the Doogh carefully to remove any small curds, ensuring a silky texture.
4️⃣ Add it to the half-cooked rice and let it simmer slowly until creamy and fragrant.
5️⃣ Finally, garnish with fried onions (piaz dagh) and mint oil (na’na dagh) before serving.
This is pure village comfort — warm, simple, and filled with the soul of Iran’s countryside. 🇮🇷🌿

Chickpea & Spinach Ash 🥣🌿
I am reposting this recipe because some of you asked about a substitute for kashk 😊
If you can’t find kashk, you can use this instead:
Mix 3 tbsp yogurt + 1 tbsp sour cream + 1 tbsp flour and use it in place of the kashk mixture I used.
Ingredients:
* Oil
* Onion
* Spices (salt, black pepper, turmeric)
* Cooked chickpeas
* Soaked rice
* Soaked bulgur
* Boiling water
* Spinach
* Kashk (or the yogurt mixture above)
Topping:
* Fried onion
* Mint oil (fried dried mint)
If you like, you can top it with fried mint and fried onions 🤍
Enjoy!!! 😊
