Quick pickles are incredibly simple and delicious. Technically they are not "pickled" in the traditional sense with fermentation. Instead, the acids in vinegar give them a tang and firm the cell walls for a satisfying crunch. Sugar is added to balance the acid and the salt. 🍍🔪BACK TO BASICS Day 22: How To Break Down a Pineapple! It’s easier than it may seem. Just slice off the top and bottom, then place stand the pineapple on its base. Remove the skin in strips with your chef’s knife, following the curve of the fruit. One you’ve removed the skin, you can go in an clean up any imperfections. 😉 There’s a cylindrical core in the center, so you want to slice two large planks from either side, then slice the remaining batons of fruit from around the core. Slice lengthwise into batons for easy snacking, or slice across the batons for a dice. For thin fruit plate slices, slice the large planks crosswise as thinly as you’d like. 👊🏻
