Mother’s Day always brings me back to my mom’s favorite… lemon meringue pie. A little tradition, a little memory, and one that always feels worth making. . I made this one with @Lakanto cane sugar with monk fruit and loved how it came out, still that classic sweetness I remember. . Happy Mother’s Day 🤍 . Lemon Meringue Pie with Lakanto Cane Sugar A classic lemon meringue pie with less sugar #lakantopartner . INGREDIENTS . Filling • Dice the zest of 4 lemons • ½ cup lemon juice-approximately 4 lemons. • 4 large eggs and 6 large egg yolks • 4 tablespoons Lakanto Cane Sugar with Monkfruit • 6 tablespoons good quality salted butter, cut into small pieces • 6 tablespoons good quality unsalted butter, cut into small pieces . Meringue • 6 large egg whites. • 4 tablespoons Lakanto Cane Sugar with Monkfruit • 2/3 teaspoon cream of tartar • 1 teaspoon vanilla extract . Make a 9” pie crust. . Make the Filling: 1) Preheat oven to 350°F. 2) Put zest in glass or ceramic bowl. Strain lemon juice into the bowl. 3) In a heavy saucepan, gently combine the eggs, yolks and the Lakanto cane sugar. 4) Mix in the zest and lemon juice. 5) Turn on pan to low/medium and add all the butter. 6) Cook over low to medium heat, constantly whisking, until the mixture thickens enough to coat a spoon. 7) Remove from heat and let stand for a few minutes. 8) Place filling in pre baked pie crust and bake for 12-17 minutes until set. . Make the Meringue: 1) Place egg whites and Lakanto cane sugar in a heatproof bowl on a pot of simmering water or use a double boiler. 2) Whisk constantly until warm to the touch and sweetener is dissolved. 3) Transfer egg whites to mixer. 4) Add cream of tartar and beat on high speed till it thickens. 5) Add vanilla, continue beating until whites have stiff peaks, are glossy & hold shape well. . Assemble the Pie 1) Add meringue to the pie, covering the filling. 2) The meringue should completely touch the crust to form a seal. 3) Make peaks or gentle waves with the meringue. 4) Place in oven for 4-6 minutes until browned. Make sure to keep an eye on this-it goes fast! 5) Cool for 1-2 hours before serving. . ENJOY 🍋 . . . . . . #lemo
