5 VEGGIE SAVOURY MUFFINS 😮‍💨 Save this recipe! Need to get some more veggies into your day? Try these super easy 5 Veggie Savoury Muffins the whole family will love! Pop them in lunchboxes or grab one to eat on go, these muffins are also packed with protein and a delicious snack to keep you energised throughout the day and in-between meals. Here’s the recipe👇🏼 Makes 12 regular sized muffins Ingredients * 1 carrot * 1 zucchini * 1 cup baby spinach leaves (finely chopped) * 1/4 cup canned corn * 1/4 cup canned peas * 1 cup grated cheese * 1/4 cup greek yoghurt * 1/2 cup plant milk of choice (I used soy milk) * 2 eggs * 1/4 cup extra virgin olive oil * 2 cups plain wholemeal flour * 3 tsp baking powder Steps 1. Preheat oven to 180C. Line a muffin tin with 12 muffin casings and set aside. 2. Grate zucchini & carrot and squeeze out excess liquid. 3. In a large mixing bowl, combine zucchini and carrot with corn, peas, cheese, spinach, eggs, olive oil, yoghurt and milk. 4. Add the flour and baking powder to the wet ingredients and gently fold the mixture, until just combined. 5. Transfer the mixture into the muffin tray and bake for 20-25 minutes or until a skewer placed into the centre comes out clean. 6. Enjoy! MINI BREAD PIZZA 🍕 🍕 These Mini Bread Disc Pizzas are the ultimate snack hack! Super crispy, extra cheesy, and no oven required. ✨ Ingredients • Base: White or Brown Bread slices • Sauce: Pizza sauce or a Mayo-Chetchup blend (as seen in the video) • Toppings: * Finely chopped Green Capsicum • Finely chopped Onions • Boiled Sweet Corn • Cheese: Mozzarella (grated or diced) • Seasoning: Chili flakes and Oregano • Cooking: Butter (for the pan) and a small bowl of water (for steam) Step by step instructions 🧑‍🍳 1.Use a glass to cut round discs out of fresh bread slices. 2.Apply a thick layer of pizza sauce or spicy mayo to each disc. 3.Add chopped capsicum, onions, sweet corn, and a pile of mozzarella. 4.Sprinkle generously with chili flakes and oregano. 5.Place in a buttered pan with a small bowl of water in the center. 6.Cover and cook on low heat for 3 minutes until the cheese is perfectly gooey. Try this! The slices never brown 😱 My kids only eat the entire apple if it’s cut up but send it back home in their lunchbox if it gets *yucky*. I came up with this trick one day using a rubber band from my produce and it works perfectly to prevent oxygen from touching the cut apple parts, keeping them totally pristine.
