From tapping the trees, to collecting sap, to hours of boiling- here’s a quick look at how maple syrup is made from start to finish.

The sap was pouring in this afternoon. It is soon to become Maple Syrup! 🍁
The More You Know: Maple sap is roughly 98% water. When it comes out of the tree, it's clear! The amber color we know and love comes when the sap boils down into delicious Maple Syrup.
Along with the first batches of our maple syrup, we’re creating something else very special for Maine Maple Sunday - freeze dried maple sap! We filter the sap right from the tree and then freeze dry it to remove all of the water. What’s left is a delicate and delicious pure maple sugar - perfect for tea or coffee, sprinkled on berries or buttered toast, or of course, as a pancake topper. Jars will be available in our farm market on Sunday, March 22nd!

Fun fact: maple sap is 98% water. The boil makes the magic. 🍁
It takes hours over a fire until it reaches the right density and sweetness. From there, sugarmakers can take it further: whip it into cream, granulate it into sugar, or cook it into candy. One ingredient, endless possibilities.
And unlike refined sugar, pure maple syrup contains antioxidants, zinc, and manganese. Straight from the tree, nothing added.

Did you know that it takes about 40 gallons of sap to make 1 gallon of maple syrup?! 🤩
If you’ve never seen the process, it feels a little like witnessing magic.
In early spring, when the days rise above freezing but the nights are still cold, maple trees begin moving sap from their roots up into their branches. 🌳
That sap gets collected from the trees… and it looks almost exactly like water.
The sap is slowly boiled down for hours until the water evaporates and what’s left is the rich, golden syrup we know and love.
I love maple syrup not only because it’s delicious, but because it’s real food from nature.
Unlike the artificial pancake syrups many of us grew up with, pure maple syrup contains minerals like manganese and zinc, along with antioxidants.
It’s still a sweetener, of course — but when used thoughtfully, it’s a much more natural option than highly processed sugars.
In our house we use it for things like:
🍁 sweetening yogurt, smoothies, or tea
🍁 oatmeal or chia pudding 😋
🍁 salad dressings and marinades
🍁 baking 🍪
🍁 pancakes and waffles, of course
And sometimes… straight off the spoon. 😉
Nature really is the sweetest teacher! 😍
🍁 Our final batch of syrup for this season! We learned a lot from batch one to batch two and we look forward to continuing to perfect our maple syrup skills in the coming years!

Every maple syrup lovin’ folk I have the privilege to talk with has a preference of syrup color/flavor: either a lighter or darker.
Here’s some fun science on a bit of why maple syrup comes in different colors as the sugaring season progresses.
What’s your preference of syrup color or flavor?

Did you know maple sap starts flowing when nights are cold and days are warmer? Our own Stephanie took advantage of this weather pattern to try sugaring for the first time. She recently tapped in and the sap started flowing!
She collected about 8.5 gallons of sap and, after boiling it down, ended up with just about a quart of pure maple syrup.
Big thanks to Bri Hart from White Oak Farm in Yorktown for helping Steph get started!
