Alright, beloveds, gather round. Wipe the bench. Flour your hands. Listen close, because this is one of those lessons that separates a pizza maker like myself from a real pizza chef.
Temperature plays a huge part I found out this weekend. Gas retention plays a huge part. Fermentation, hydration, dough strength, balling, proofing, all of it matters. But don’t get sidetracked. Yesterday I cooked at 640–650°F, and my cornicione didn’t rise the way I wanted. Today I cooked at 745–750°F, and it rose. Same dough, different result. That tells you something. Then I took that same dough to a brick oven, and it produced a pizza so lovely it made me quiet: an expansive cornicione, open crumb, air pockets, alveoli, extraordinary structure. Even on a Pizza Master electric oven, it performed very, very well. So now I understand something I need you to understand: the oven you’re using has limitations. It’s a good oven. I’m not here to knock the Ooni Koda 16, they make an incredible product. But the same dough is going to react differently in different ovens. Brick oven. Gas oven. Electric oven. They breathe differently. They radiate differently. They recover differently. They have different floors, domes, airflow, and thermal mass.
You cannot chase a brick-oven cornicione in every oven. You cannot force a dough to give you something the oven cannot support. That’s not defeat. That’s information. So now I go back to the drawing board. Not to complain. To adapt. I’ll adjust hydration. I’ll play with fermentation. I’ll change my ball proof, my launch temperature, my preheat, my rotation, my bake time. I’ll learn the oven’s language and speak it back to it. Because the job is not to make the pizza you want in your head. The job is to make the best pizza the oven in front of you can possibly produce. That’s craft. That’s humility. That’s mastery. So go test. Go taste. Go fail. Go learn. Make the best with the best you have. Enjoy your weekend.

Looking for a pizza maker
It's 'Za time! Pizza, that is. 🍕 I got a pizza maker as a gift from my sweet guy and the best part of all, he is the one usually making the pizza. I've learned a few secrets and I'm sharing my 'Za adventures. It's some of the best pizza I've ever had . . . .if I do say so myself. 😎
