FIG LEAF & PLUM POSSET WITH POMEGRANATE PLUOT GRANITA. Plum season is in fully swing and what better way to enjoy them than this cool refreshing 5 ingredient fig and plum posset! Fig leaves and fresh plum juice get added to sugared cream to create the loveliest little posset that is creamy, thick and perfectly sweet and tangy! This is my first-time using fig leaves and I am in love! The fig leaves impart a slightly coconutty vanilla note to the posset while adding the lightest bit of vegetal flavor. @lanibakes posted about posset a while back and I’ve been obsessed ever since. Her post explained how posset typically relies on an acidic, low Ph juice like lemon to set, so I thought what other fruits might have a similar Ph level to lemon? Low and behold, plums have a very similar Ph as lemon! Thanks to the tartness of the plums, I was able to substitute the full amount of lemon for plum and it is absolutely divine. The tartness from the skin of the plum helps coagulates the posset while the sugary honey like flesh of the plums add to the sweetness of the posset. While the posset is the star of the dish, let’s not forget about that delicious pomegranate pluot granita! It so simple to make and the flaky dry texture of the granita just pairs so well with the creamy posset!
