Homemade pickled vegetables - the cleanest, crunchiest batch you’ll ever make.
MY BRINE / PICKLING JUICE RECIPE
This brine works for any vegetable combo: (double ingredients as needed)
• 1 cup filtered water
• 1 cup distilled white vinegar
• 1 tablespoon sea salt
• 1 teaspoon whole peppercorns
• 3 to 4 garlic cloves (smashed)
• Optional: bay leaf, chili flakes, dill, Trader Joe’s Italian Herb Mix
Bring water, vinegar, and salt to a simmer until the salt dissolves.
Let the brine cool completely.
Pour over your veggies, seal, and refrigerate 24–48 hours.
Keeps perfectly for 2–3 weeks.

All the SECRETS to making pickles from any food at home
INGREDIENTS:
{BASE}
10g black peppercorns
10g coriander seeds
5g cumin seeds
5g chili flakes
750 ml water
750 ml vinegar
10g salt
100g sugar
Garlic cloves
Sprigs of rosemary
Bay leaves
1 cucumber
6 radishes
1 red onion
½ head broccoli
½ head cauliflower
½ red bell pepper
½ yellow bell pepper
1 carrot
HOW TO:
The first step is to sterilize the glass jars. In a large pot, place cloths on the bottom and sides, fill with water, and add the glass jars. Boil for 30 minutes. For the seasoning base, place the black pepper, coriander, cumin, and chili flakes in a food processor and grind until fine. In a saucepan, add the water, vinegar, salt, and sugar, and bring to a boil.
For the cucumber jar: in a sterilized glass jar, add the seasoning base, garlic, rosemary, bay leaves, cucumber, and the hot vinegar water. Seal the jar.
For the radish and red onion jar: in another sterilized jar, add the seasoning base, garlic, rosemary, bay leaves, radishes, red onion, and the hot vinegar water. Seal.
For the broccoli, cauliflower, peppers, and carrot jar: in another sterilized jar, add the seasoning base, garlic, rosemary, bay leaves, broccoli, cauliflower, red and yellow peppers, carrots, and the hot vinegar water. Seal.
Finally, place all the jars back into the pot with water and boil for another 30 minutes. Serve.

My go- to pickle recipe
Equal parts white caster sugar and any vinegar
Bring up to boil and simmer. Leave to cool COMPLETELY ( v important or you will cook whatever you want to pickle)
Add raw veg eg radish, cucumber, cauliflower, fennel
Or fruit eg berries, plums, apricots, cherries
TIPS:
Use white sugar or contents will brown
use nice vinegar for a nicer pickle
Re use the pickle liquor for next pickle
I personally don’t add water or seasonings as I like the pickle to taste super punchy and clean but add if you want to

Easy 24-hour Quick Pickles 🥒
Quick Pickles 🥒⤵️
2 large cucumbers, sliced
2 cups white vinegar
1 cup water
1 tbsp mustard seed
1 tbsp dill seed
1 tbsp kosher salt
1/2 tbsp sugar
6 sprigs fresh dill
2 tbsp black peppercorns
4-5 cloves garlic, whole
1. In a pot over medium heat, add the vinegar, water, mustard seed, dill seed, salt and sugar. Stir well & bring to a boil for 1-2 minutes, then let cool.
2. Add the sliced cucumbers, fresh dill, peppercorns, and garlic to a jar and pour the pickling liquid on top until full.
3. Store in an airtight container in the fridge for 24 hours (or up to 6 weeks).

recipe:

I have ALWAYS been a pickle hater until I tried ✨homemade pickles✨
So if you’re a pickle hater, maybe give them a second shot… here’s my super quick recipe!
You’ll need:
-2 Persian cucumbers (1 sliced, 1 cut into spears)
-6 garlic cloves (3 per jar)
-Black pepper
-You can add a few sprigs of fresh dill to each jar, but I don’t like dill, so I didn’t add it
-Chili flakes or chili powder just a little, or a lot if you like them spicy
-Brine: 2 cups white vinegar + 2.5 cups water + 1 tbs salt
How to make them:
1 Add vinegar, water, and salt to a pan. Bring to a boil, then remove from heat to cool.
2 Prep your cucumbers: one into slices, one into spears.
3 Coarsely cut 6 cloves of garlic.
4 Add cucumbers, garlic, pepper, and chili flakes/powder to each jar.
5 Pour the cooled brine: fill the spears jar first, then pour the remaining liquid into the slices jar.
6 Seal and refrigerate. They are the best after 3-4 days and stay fresh for a few weeks!

Homemade quick pickles 🥒✨
My kids have been loving these for snacks, and I love adding them to lunches. They’re so easy to make and instantly upgrade rice bowls, tacos, sandwiches — everything. I also made a jar of pickled red onions for the same reason 🙌🏽
Quick Pickle Recipe:
• 5 Persian cucumbers (fills 2 mason jars)
• Fresh dill
• Garlic cloves
• Peppercorns
Brine:
• 2 cups water
• 2 cups distilled white vinegar
• 1 tbsp salt
• 1 tbsp sugar
1. Add dill, garlic, and peppercorns to the jars.
2. Slice cucumbers and pack them in.
3. Bring water, vinegar, salt, and sugar to a boil until dissolved.
4. Pour over cucumbers until fully submerged.
5. Let cool, refrigerate, and enjoy!

It’s crazy to think about how pickling with vinegar has only been common for about 150 years. On the other hand, lacto fermentation has existed for thousands of years.
Overall I’m happy with this batch of pickles that I made, but I’m excited to dial in the spices more next time.
Apparently more mature dill is ideal compared to what I had on hand. If not, dill seed is a good approximate for the “classic” dill flavor since seeds come from mature dill plants.
