We’re celebrating Vermont’s sweetest tradition with Maple Fest at UVM Dining! All year long, every drop of maple syrup we serve comes from the UVM Proctor Maple Research Center, right here in Underhill, Vermont. Throughout the week, our dining locations will feature special maple treats and dishes—so keep your eyes peeled for something sweet. Did you know? 🍁 Vermont is the #1 maple-producing state in the U.S., making more than half of the nation’s maple syrup each year. 🍁 It takes about 40 gallons of maple sap to produce just 1 gallon of maple syrup. 🍁 Maple syrup production depends on the classic Vermont weather pattern: freezing nights and warm days that help sap flow from the trees. Join us as we celebrate the taste, science, and tradition of Vermont maple—made locally, served on campus, and proudly part of the UVM community.

Maple season in Vermont is something you have to feel, not just see. Cold air, muddy boots, steam rising from the sugarhouse — and that sweet smell everywhere. We went to Sugartree Maple for pancakes and fresh maple syrup, and honestly… nothing tastes the same after this. Watching how maple syrup is made makes you appreciate it so much more. It takes about 40 gallons of sap to make just 1 gallon of syrup — all slowly boiled down for hours until it becomes that rich, golden sweetness. #mapleseason #maplesyrup #vermont
