Some recipes are more than just recipes. This is one of them. This chocolate chunk shortbread has been in my family for over 30 years. My mother handed it down to me and I have been baking it ever since. When I opened Chocolat on James in 2015 it came straight to the shop with me — loaded with chocolate chunks and sitting on the counter right next to the espresso machine. We had a little cafe inside the shop where we served caramel lattes, mocha-chinos, chai lattes and hot chocolate. And these shortbread cookies were the perfect indulgence alongside every single one of them. Customers would come in for a latte and leave with a cookie in their hand every single time. Some days they came in just for the cookie. 😄 Buttery. Crumbly. Loaded with chocolate chunks. The kind of cookie that feels like a hug in every single bite. Scottish Shortbread 🤍🏴󠁧󠁢󠁳󠁣󠁴󠁿 There’s something so special about making traditional Scottish shortbread, especially in a beautiful wooden cookie mold. And I’ve found a little trick that gets mine out beautifully almost every time! Here are my tips. Lightly flour your mold, gently press in the dough, then use a floured rolling pin to press it evenly into all those lovely details. Then comes the fun part — one firm tap to release! My Scottish Shortbread Recipe 2½ cups all-purpose flour 1 cup unsalted butter, softened ½ cup caster sugar ½ tsp salt Bake at 350°F (175°C) for approximately 25 - 27 minutes, depending on the thickness of your shortbread. Welcome back to Baking on a Budget, the series where I create easy recipes that won’t break the bank but taste just as delicious ✨ For the fourth episode, we have the M&S Chocolate Button Shortbread Dupe made in an Air fryer! 🍫 Using the 1 - 2 - 3 method, we’ve turned a popular supermarket bakery buy into a budget friendly classic filled with chocolate buttons and they’re DELISH. The full recipe is below x #baking #budget #shortbread #easybaking #airfryer Ingredients: 100g caster sugar 200g unsalted butter, softened 300g plain flour 200g chocolate buttons, chopped Method: 1. Line a 9” square cake tin with parchment paper and preheat the Airfryer to 150c (or 170c oven). In a large bowl, mix the butter and sugar until combined before adding the flour and mixing. The mixture will be crumbly. 2. Add the chopped chocolate buttons to the mixture and press this into the tin. Bake for 18-24 minutes in the air fryer (keep an eye!) and 22-26 in the oven. Enjoy!

Almond croissant cookie bars using my new @ooni.uk halo core! Shortbread * 225 g unsalted butter, softened * 150 g caster sugar * 15 g vanilla extract * 315 g plain flour * 1.5 g salt Almond Frangipane * 115 g unsalted butter, softened * 200 g caster sugar * 10 g vanilla extract * 1.25 g almond extract * 2 large eggs, at room temperature * 190 g ground almonds * 8 g plain flour 1. Cream the butter and sugar. 2. Add vanilla. 3. Add the flour and salt but don’t over mix 4. Divide the dough and put 2/3 in the tin and keep 1/3 to crumble later 7. Chill for 15 before baking at 170 for 15-20 mins 8. Make the frangipane by creaming butter and sugar 9. Add eggs one by one and then adding vanilla 10. Add almond flour and plain flour and mix until smooth 11. Layer the frangipane and crumble the remaining shortbread dough on top. Sprinkle almond flakes and bake at 170 for 35-40mins 12. Cool and dust with icing sugar #Almondcroissant #baking #cake

Including the psychopath who owns this app. Anywayyy… this millionaire shortbread is bloody delicious: the shortbread is buttery and the caramel and chocolate layers slice like butter! Melting moments with lemon buttercream 🍋 RECIPE ↓ Shortbread: • 250g unsalted butter, softened • 1 tsp vanilla • 60g soft icing sugar, sifted • 225g plain flour • 60g cornflour Lemon buttercream: • 100g unsalted butter, softened • 250g soft icing sugar, sifted • 2 tsp lemon zest • 1 tsp lemon juice Preheat oven to 160°C (fan). Beat the butter, vanilla and icing sugar for 1 minute until fluffy. Stir in the flour and cornflour in three lots using a rubber spatula. Roll tablespoon-sized portions into balls using lightly floured hands and place onto lined trays. Gently flatten with a floured fork. Bake for approx. 15 mins until light golden around the edges (not brown!), swapping the trays around the 10 minute mark. Allow to cool completely on the trays. For the icing, beat the butter until fluffy. Gradually beat in the icing sugar, then add the lemon zest and juice. Beat for 2 mins on high until fluffy and creamy. Sandwich the cooled biscuits together with the lemon icing, then refrigerate for one hour to help it set.
