Breakfast Tacos: (taco holder from my Amazon storefront▶️Kitchen organization list) Ingredients: * 8 soft corn or flour tortillas * 8 large eggs * 1/2 cup diced onion * 1/2 cup diced green bell pepper * 1/2 cup diced red bell pepper * 1/2 cup cooked and crumbled breakfast sausage * 1/2 cup shredded cheddar cheese * 1 tablespoon vegetable oil * Salt and pepper to taste * Optional toppings: sliced avocado, diced tomato, hot sauce, cilantro, sour cream Instructions: 1. Heat the vegetable oil in a large skillet over medium heat. Add the onion and peppers and sauté until softened, about 5 minutes. 2. Add the crumbled breakfast sausage to the skillet and continue to cook until browned, about 5 more minutes. 3. In a separate bowl, beat the eggs with salt and pepper to taste. 4. Pour the beaten eggs into the skillet and scramble them with the onion, peppers, and sausage, until the eggs are cooked through. 5. Warm the tortillas in a separate skillet or in the microwave, until they are soft and pliable. 6. Assemble the tacos. 7. Fold the tortillas in half to create a taco shape. 8. Serve the breakfast tacos immediately, with optional toppings such as sliced avocado, diced tomato, hot sauce, cilantro, and sour cream. Enjoy this classic Texas breakfast dish any time of the day!
