Without doubt this has to be one of my favourite tagines that I tasted in Morocco and absolutely love cooking. In fact, the first time I tasted this, was in the town of Casablanca. The slight sourness of the preserved lemons, the saltiness of the green olives and the magical aroma of saffron all combined in this tagine is wonderful. You don’t need too long to marinate the chicken, once it’s all mixed up, allow it to sit for up to two hours to marinate. If you don’t have a tagine, use a heavy based shallow saucepan with a tight fitting lid. This dish can either be cooked in your preferred vessel either on the stove or in the oven. Using a tagine has amazing benefits as it creates and traps in so much moisture to the dish - so when cooking proteins, they became so tender. If you are cooking on the stove, bring it to a boil, then drop to a gentle simmer and allow to cook for one hour. If baking in the oven cook at 160°C (fan forced) for an hour as well. Here’s the recipe which will feed up to four people: 3tbs olive oil 1tbs minced garlic 1tbs ground cumin 1tbs ground coriander 12 strands saffron 1tsp ground turmeric 1tsp ground mild paprika 3/4tsp ground black pepper 1tsp salt 4tbs coarsely chopped coriander 4 small preserved lemons, flesh removed and skin sliced into strips 2 medium brown onions, halved and sliced 1/3 - 1/2 cup pitted green olives 10-12 chicken drumsticks (skins removed) 2/3 cup water Combine all the ingredients in a tagine or a similar cooking vessel. Allow to marinate up to two hours and cook either on the stove top or in the oven as mentioned in the caption above. . . . #moroccanfood #tagine #presevedlemons #greenolives #chickenrecipe

Martha’s lamb and squash tagine is a luscious lamb stew with butternut squash, cinnamon, and prunes. Tagine refers to both the dish and the food that is cooked in it, but if you don’t have this specific cookware, you can use a Dutch oven. Martha serves the tagine with steamed couscous for a perfectly cozy cold-weather meal. Get the recipe at the link in our bio.
