I only like to learn fermentation from two places: from knowing the microbes and from cultural recipes passed down in families.
I originally learned how to make kvass from a Russian food blogger, named Peter. @petersfoodadventures He grew up drinking beet kvass made by his grandfather. It doesn’t get more historically/culturally accurate than that
After learning from Peter’s blog, I developed my golden beet kvass recipe, with some slight variations of my own and a secondary fermentation to carbonate it. (Peter is credited and linked in the recipe blog too, so you can check out his original beet kvass recipe!)
Anyways, beet kvass is a delicious, sweet, bubbly beverage, not a salty lacto-ferment 🤗🫧✨

𝘿𝙚𝙩𝙖𝙞𝙡𝙨:
- 3 beets
𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1. Wash, peel , and slice very thin (the thinner, the faster they dry).
2. Place on a parchment lined baking sheet. Bake at the lowest temp (150–170°F) for 3–4 hours, flipping halfway, until brittle.
3. Make sure all slices are fully dry (should snap, not bend).
4. Use a high-speed blender, spice grinder, or coffee grinder to blitz dried beet chips into a fine powder.
5. Pass powder through a fine mesh sieve to remove larger bits.
6. Transfer to an airtight glass jar. Keep in a cool, dry, dark place. Lasts up to 6 months.

𝘿𝙚𝙩𝙖𝙞𝙡𝙨: (juice)
- 2 beets
- 3 medium sized carrots
- 1 apple
- 1/2 lemon
- 1 cup water
𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1. Wash and chop produce
2. Blend all of the ingredients for 60-90 seconds
3. Pour into a fine mesh strainer/nut milk bag and squeeze out the pulp
* Good for up to 3 days, but you can freeze the liquid to preserve nutrients
𝘿𝙚𝙩𝙖𝙞𝙡𝙨: (beetroot hummus)
- 1 can chickpeas
- 1 medium beet
- 1/4 cup tahini
- Juice of 1/2 lemon + zest
- 1 tsp garlic powder (or 3 cloves of garlic)
- 1/4 tsp cumin
- 1/2 tsp salt
𝙏𝙤𝙥𝙥𝙚𝙙 𝙬𝙞𝙩𝙝:
- Dried parsley
- Olive oil
𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1. Wash the beet and remove the skin.
2. Lightly coat the beet with oil, wrap in aluminum foil, and bake at 425°F for 1 hour.
3. Rinse the chickpeas and place them in a food processor.
4. Add beet as well as the rest of the ingredients
5. Blend until smooth, scraping down the sides as needed to ensure even mixing
6. Serve with your choice of veggies, pita, or crackers. Enjoy!

- 1/4 tsp salt

Ingredients
⁃ 2½ pounds medium red beets (6 to 8 beets), trimmed, peeled and sliced 1-inch thick
⁃ 2 tablespoons extra-virgin olive oil
⁃ ½ teaspoon salt, divided
⁃ ¼ teaspoon ground pepper
⁃ ¾ cup lower-sodium vegetable broth
⁃ 3 tablespoons balsamic vinegar
⁃ 2 teaspoons honey
⁃ 1½ teaspoons chopped fresh rosemary, plus more for garnish
⁃ 1 teaspoon Dijon mustard
⁃ 1 tablespoon cold unsalted butter, cut into 4 pieces
Directions
1. Preheat oven to 450°F. Toss sliced beets, 2 tablespoons oil, ¼ teaspoon salt and ¼ teaspoon pepper in a 9-by-13-inch metal baking pan; arrange in a single layer. (Do not use a glass dish, which could shatter.) Cover with foil. Roast until tender and easily pierced with a paring knife, about 50 minutes. Carefully remove the foil.
2. Stir together ¾ cup broth, 3 tablespoons vinegar, 2 teaspoons honey, 1½ teaspoons rosemary and 1 teaspoon mustard in a liquid measuring cup; carefully pour into the pan. Continue roasting, uncovered, until the beets are very tender and most of the liquid has been absorbed, about 20 minutes.
3. Place the pan on a heat-safe work surface; immediately add butter pieces. Gently shake the pan back and forth until the butter is fully melted and emulsified. Garnish with rosemary, if desired.
