*** if you’re having trouble add***
1 oz Aquafaba (liquid from garbanzo beans can)

Place everything in a jar or bowl and blend with immersion blender. Keep the blender flat on the bottom without moving it for 1 min. Once it thickens up a bit on the bottom you can start moving it around.

Here’s how to make a proper Lebanese Garlic Sauce, aka Toum.
Ingredients:
- (1 cup) Garlic Cloves
- (1 Tbsp) Boiled Potato
- (1 cup) Light Olive Oil
- (Pinch) Salt
Add a cup of garlic cloves and a sprinkling of salt to a food processor and pulse until it’s finely minced. Pause the food processor and add a heaping tablespoon of boiled, skinless potato, then continue to blend until creamy.
Start slowly drizzling in the olive oil in a little bit at a time to keep the sauce from splitting. Continue to blend the sauce for about 5 minutes, or until it’s completely smooth and creamy.
Serve immediately as a dipping sauce or spread, or store in an airtight container in the fridge for up to a month.
There are so many ways to make garlic sauce, but this one is something special. And just trust me about the boiled potato— it’s a game-changer if you want a perfectly-textured garlic sauce.
Give it a try and let me know what you think.

Toum (Garlic Sauce) – Balanced Home Recipe
Ingredients
• 40g peeled garlic
• 4g coarse salt
• 20g fresh lemon juice
• 20g cold water
• 200g neutral vegetable oil
Yield: about 280g toum
This follows a classic Toum ratio:
1 part garlic : 5 parts oil
10% salt, 50% water, 50% lemon (to garlic ratio)
Method:
1- Create a Smooth Garlic Base
Blend (or crush) the garlic with salt, a small amount of water, and a little lemon juice until it becomes paste-like.
2- Start the Emulsion
Begin adding the oil very slowly, almost drop by drop at first, while blending continuously.
3- Alternate and Build
Continue adding oil gradually, alternating occasionally with small additions of water or lemon juice, until all the oil is incorporated and the sauce becomes thick, white, glossy, and mayonnaise-like.
If it breaks
Start with egg white, or whole egg, and repeat step 2.

This is toum, an intense but delicious garlic sauce commonly eaten in the Eastern Mediterranean region, including countries like Lebanon, Syria, Palestine, and Jordan—made by emulsifying raw garlic with oil, lemon juice, and salt until it turns thick, fluffy, and bright white.

This is the ultimate test if you’re really a garlic fan 🧄 (Ingredients below)
Toum (the Arabic word for garlic), is a Lebanese garlic dip that is made in a similar way to mayonnaise. Just instead of an egg yolk, it’s the properties of the garlic that emulsify it together with the oil and lemon juice into a stable dip. Plus, it’s naturally plant-based. This one packs a punch and goes beautifully with grilled veg, on flatbreads or with crispy potatoes 🤤
Before starting, half all of the garlic cloves and remove the germ (the green part), as it would add an unpleasant sharpness and bitterness to the dip. When you start blending your Toum, make sure not to move the blender at all for the first 10 seconds, then only very carefully let in smaller amount of oil at a time until you hear the sound change. Boom. The emulsification worked 👏
Ingredients: 1 garlic bulb (60g garlic cloves), 200 ml sunflower oil, 40ml lemon juice
