The Gilded Age is BACK, which calls for a festive new series! One where I get to wear a top hat ANDDDDD confirm if recipes from the 19th century stand the test of time…or if they have fallen from grace.

First up…Lobster Newburg, which reigned supreme in 1876 and for many years thereafter. But is she still iconic? I’m on da case!

ICONIC. LEGENDARY…

…CORN-Y. 🌽🍯🍦

What do these words have in common?

They all describe my Honey Cornbread Ice Cream…yes, there’s REAL corn in the ice cream! Ahh!

Imagine the most moist, buttery cornbread you’ve ever tasted… drizzled with sweet + salty honey butter… now swirl all that flavor into creamy, dreamy ice cream and serve it on a cone. Exactly. You see the vision 😮‍💨

This batch is dairy-based (I was experimenting), but don’t worry—something dairy-free + corn-y is coming soon for my plant-based dolls.

Full recipe below. Save this post & tag me if you try it 🤎

Ingredients:
3 ears of fresh sweet corn
2 cups whole milk
2 cups heavy cream
1 cup of sugar
3 eggs
4 egg yolks
1 teaspoon of vanilla extract
Sea salt
Honey

Instructions
Cut the kernels from the cobs, and puree in a food processor (save the cobs to steep)

Add your milk, heavy cream, corn (puree and cobs) and heat over medium heat until it slowly starts to bubble, once almost boiling remove from heat, cover and let steep (I did an hour, but I’d say 20 mins minimum). Then bring the temp back up to almost boiling and add 1/2 cup of sugar, a sprinkle of salt, and remove the cobs.

Combine eggs, egg yolks, and 1/2 cup of sugar, whisking quickly until smooth (I whisked for what felt like eternity, but it was only 5-6 minutes).

Take 1 cup of your hot corn mixture, and whisk into your egg mixture slowly but steadily until well incorporated. From there, steadily whisk your egg mixture into your saucepan.

Once combined, take off heat and pour it into to a bowl, add your vanilla, cover and chill (~3 hrs or overnight).

After your vanilla corn custard has chilled the final pour is into the ice cream machine, and let it do its think for about 20-25 mins.

Scoop into container, add your cornbread (I used honey jalapeno - but you can use any really), and freeze for 5-6 hrs.

Top with warm honey, a sprinkle of sea salt, and enjoy.

I know chilean sea bass is tired of me omg

I’m now on my fourth (or fifth?) version…and I’m sure there are more to come. That said, this one is jerk inspired…spice, peppers, ginger, packed with flavor…but slightly adjusted so that it compliments this fish.
