This is Gulf Coast magic brought to the Texas field: Royal Red Shrimp. Creamy Polenta. And an absolute game-changer of a Boudin Gravy.

I picked up these unique Royal Red Shrimp on a business trip to Gulf Shores, Alabama. They’re a rare treat. Naturally sweet from living 1200 feet deep in the Gulf. And I wasn’t about to leave without bringing a batch home. To keep them pristine on the long journey back to the Texas ranch, my @dometic CFX was an all-star. Safely transporting this seafood gold from the coast to the field. That’s how you turn an ordinary camp dinner into a culinary adventure.

Before electricity, before ovens in homes, there was Baeckeoffe - a bread-sealed pot of wine-braised magic that turned town bakers into dinner heroes. Today, we’re taking this 300-year-old Alsatian tradition wild with venison, nilgai, and boar. Each cut bringing its own story from the Texas landscape.

First discovered this at an Alsatian wine dinner years ago, but it wasn’t until I started hunting that it found its true voice. Sometimes the best traditions don’t need updating, they just need wild game.

Things about being a Texan that nobody writes down. All in one short film.

Three minutes. Two challenges: watch the whole way through, and tell me what I missed.

Somebody’s going to say kolaches — somebody always says kolaches.

Made it with @dometic — new cooler at @academy and I wanted a fun way to welcome them to my home state. by @texas_josh

Texas BBQ
both noun and verb.

Wild game, livestock
time changes the pursuit

Mesquite, post oak
smoke filled pit room
fire paints and dances

Opening weekend hits different,
when you cut through the noise.

Fast birds in the heat, good dogs resting in the shade,
and a proper plate built right on the tailgate for close friends.

Make the calls. Gather the collars.
Leave the pavement behind and settle in.
A little slower, a lot better.

The season is officially here.

September is here.
Temps are hot. But so is the hunting & fishing.
Get after it, but keep the cold ones close.

Another fun one with @dometic at my place,
both mornings early, before the day got away.

Welcome to Texas, Recon. Now at @academy by @texas_josh

Looking for a new cooler Texas? I’m cooking the welcome for the new @dometic Recon. So we started with a dish that cooks inside the cooler.

No fire.
Gulf snapper, salt, lime, and the bowl sitson the ice for twenty minutes while the acid does what heat would. Pomegranate and cilantro over the top.

Three thousand years old and it still works out of a truck bed.

Comment GULF for the recipe. Get the Dometic Recon at @academy by @texas_josh

Texas Rodeo
a small country town sermon.
Saturday night, dust in the lights,
Kids run loose behind the bleachers till eleven.
The whole town shows up.
They keep telling us places like this are gone.
We are sill here. by @texas_josh

New work for @dometic, bringing Recon to Texas and @academy

We put the cooler where it belongs: a couple redfish, a sunset, and @victorsflyfishing on the platform. Pretty cool to see this one make its way from the water to broadcast on @spacecityhn

Welcome to Texas, Recon. Now at @academy by @texas_josh

The @dometic Recon just landed at Academy, and they asked me to head up the welcome wagon. Easy yes.

I’ve had one riding along with me for a year — every state, every season, every kind of mess a cooler can get into. It earned the invitation.

So over the next few weeks: new wild game recipes, a Texas story we had way too much fun filming, and a couple of chances to come out to the ranch for a live fire event. There won’t be many spots at that one.
