Our new stickers just arrived and we’re pretty excited about how they turned out!

We’re inching closer to our 1 year anniversary so stickers were a must and there is more merch in process!

Some businesses have everything polished the moment they open their doors. You know that is not how we did it! And honestly, we’re honored that our customers have been along for the ride and get to see the growth and transformation up close and personal.

We hope to see you repping some stickers around town! by @the.firefly.cafe

Somewhere along the way, baking became something we expected to happen quickly.

For thousands of years, breadmaking was rooted in a relationship between people, their ingredients, and the natural world. Long before commercial yeast and industrial production, bakers relied on living cultures, careful observation, and time.

And there’s a reason these methods have endured.

Traditional sourdough fermentation is a remarkable process. Wild yeasts and lactic acid bacteria transform simple ingredients, developing complex flavor and changing components of the grain. Research has shown that fermentation can reduce phytic acid, improving mineral accessibility, and break down certain carbohydrates that can be difficult for some people to digest.

What generations of bakers developed through observation and experience, we’re still learning to understand through modern science.

And beyond the nutritional benefits, there’s something deeply valuable about preserving the craft itself.

The feel of dough in your hands. The patience to allow fermentation to unfold. The knowledge of how ingredients respond to temperature, moisture, and time. The skill of creating beautiful breads and pastries from scratch.

We live in a world that increasingly values speed, convenience, and efficiency. And while those things have their place, we believe there’s something worth protecting in the slower ways of doing things.

At Firefly, we choose organic, non-GMO flour, naturally fermented sourdough, thoughtfully sourced ingredients, and handmade pastries. Not because it’s the easiest way, but because we believe how food is made matters.

Some things are worth taking our time for.

Introducing Smashing Pumpkin, our seasonal house-made cream soda.

This is one of those drinks that surprised us when we were coming up with our fall recipes.

House-made pumpkin spice syrup + sparkling San Pellegrino + vanilla cold foam = basically pumpkin pie in soda form.

Refreshing, comforting, fizzy, creamy, and way more delicious than we expected. 🍂

Come try one while it’s here. by @the.firefly.cafe

The sourdough Swedish cinnamon roll. Soft and stretchy with crispy edges.

Why sourdough? Aside from the depth of flavor, it’s better for you! Fermentation may support better digestion, a gentler glycemic response, increased mineral availability, and the development of beneficial pre and probiotics that can support the gut microbiome.

The sourdough Swedish cinnamon roll is a pillar in our pastry case and a crowd favorite. by @the.firefly.cafe

Welcoming this fall weather and all things pumpkin with open arms!

☕️ How we do pumpkin spice lattes at Firefly:
regionally roasted espresso, house made pumpkin spice syrup made with real ingredients (no fillers, no artificial flavors, no additives) and milk of your choice - served hot or iced. by @the.firefly.cafe

The Harvest Salad 🌾🚜

Fresh arugula with roasted beets, delicata squash, crisp apples, red onion, toasted pepitas, soft sheep cheese, and cranberry vinaigrette…

If you think we make good sandwiches, wait until you try this fall salad 🤤

I’ve been ordering one every day with Springer Mt. Chicken added.

We opened Firefly on a prayer, hopeful that people would appreciate the quality we were after, be patient with us as we found our footing, and want to return again.

We opened our doors without being remotely close to polished or ready. We shuttled pastries from a neighboring restaurant kitchen all day, everyday. I managed the store front while Ty baked everything off site. After 4 months, we closed for 2 weeks to make the place our own and build out our baking establishment in the café.

It’s been 6 months since then. Our team has grown, our menu too, and customers keep coming and returning. We are grateful to everyone who has walked through the doors or cheered us on from afar.

I took these clips on Sunday and it brings so much joy to play them back. It’s a little glimpse into what Firefly has become in its first 10 months. We still have a ways to go and more we want to add, but all in good time.

Stop in for coffee and specialty drinks, sourdough breads, fresh pastries, breakfast, and lunch! Casual faire with quality sourced ingredients - Organic and non-gmo flour, housemade coffee syrups, regionally roasted coffee, quality meats, no weird ingredients that you can’t pronounce.
