Zucchini Chocolate Cake.

I first made this cake months ago but have been experimenting with it ever since to finally arrive at a recipe that I can share. Zucchini lends a beautiful texture to the cake and you definitely can’t taste it in there. This cake is our new favorite and it’s occupying a fixed corner in our fridge all the time. Still struggling to use zucchini any other way ;)

Give it a try and indulge in some rich, chocolaty madness. Recipe out on the blog! Link in bio.

Tikka Masala Banza with Mushroom and Paneer Tikka!
Fusion food is slowly becoming my favorite kind of food. And more often than not, there’s almost always an Indian something to it. Since Banza is already made out of our beloved chickpeas or chole as we call it, I went a couple of steps further to add the hot Indian favorite, Tikka Masala curry with Mushroom and Paneer Tikka. Try this super easy and delicious recipe this weekend!
No Banza? No problem. This recipe works well for regular pasta as well!

Mushroom Asparagus Coconut Sauce with Beer.
What was supposed to be a dip to be enjoyed with breads and crackers ended up being a pasta sauce! Because the flavors are just so right.
I hated to break my alcohol fast for this one (well not really, 1/4 cup of beer barely counts as any) but it was totally worth it. This sauce pairs extremely well with hot sauces for use in pasta dishes! As interesting as the ingredient combination sounds, it tastes great too and it’s super easy to make. Try this one out for yourself! 🍄 🍺 🥥

Masala Roasted Potato Wedges.
Growing up in a typical Indian household, ‘Aloo chips’ or ‘Aloo fingers’ were my all time favorite snack. We would gulp them down as if we hadn’t eaten anything in ages. This recipe is just a baked version of that classic that we LOVED as kids. No wait, we still do!

Zucchini-Lentil Malai Kofta.

Malai Kofta is an all-time favorite Indian curry! I went a little unconventional and made the Kofte out of zucchini and lentils instead of the conventional potatoes or bottle gourd. And I was pleasantly surprised with the result. Try this recipe for a delectable, satisfying lunch!
