Chit Chat & Cook with Me ✨🪽

Today we’re making crispy orange-honey duck legs with duck-fat baby potatoes.
RECIPE ⬇️

🦆 Duck Legs
• 2 duck legs
• Salt & pepper
• Rosemary or Thyme
• 1 fresh orange (juice + zest)
• 1–2 tbsp honey
• 1 tbsp red wine vinegar or balsamic vinegar
• Small knob of butter

🥔 Crispy Baby Potatoes
• Baby potatoes
• Duck fat (rendered from the duck)
• Salt & pepper
• Thyme or rosemary

🍊 Grilled Oranges
• 1 orange, sliced into thick rounds
• Light drizzle of olive oil or butter

METHOD:

1. Season duck legs with salt, pepper and rosemary.
2. Place skin-side down in a cold pan and cook for 8–10 mins to render the fat.
3. Flip and cook for 2 mins.
4. Roast at 160°C for 1.5–2 hours until tender.
5. Boil baby potatoes for 8–10 mins, toss with duck fat and seasoning, then roast at 220°C until crispy.
6. Simmer orange juice, zest, honey and balsamic vinegar until glossy. Finish with butter.
7. Brush sauce over duck and roast at 220°C for 10–15 mins until sticky and caramelised.
8. Grill orange slices for 2–4 mins per side and serve.

Mogodu Mondays done differently! 🇿🇦✨ Before you exile me, I had to try something new: creamy mushroom rigatoni topped with tender mogodu. I even tested two versions — one with the mogodu laid beautifully on top, and one mixed into the sauce. My fave? Definitely the first version 😋. But I know a tangy tomato-based mogodu pasta is going to bang when I try it next. Would you eat this, or do you disagree with pasta being paired with tripe? by @thebhadchef
