On Friday, June 12 at 7 PM, The Chef’s Counter returns — from the team who’s normally teaching, now creating a seven‑course tasting menu, each course showcasing a chef’s personality.
Wine pairings are chosen by our sommelier, so you can taste the why in every sip.

Expect seven thoughtful courses, wines chosen with intention, and the kind of night that starts with a toast and ends with a conga line and new friends.

An evening at The Chef’s Counter.

Join us June 12 at 7pm for an intimate dining experience in the heart of our kitchen, led by Chef Andrew Richmond and team of talented chefs.

This elevated evening features a seasonal surprise tasting menu of six or more courses, thoughtfully prepared and plated in front of you. Expect freshly made bread or pasta, seafood, meat, a vegetable-focused course, dessert, and wine pairings selected and presented by Chef Andrew, our in-house sommelier.

No menus in advance. Just seasonal ingredients, expressive cooking, thoughtful pairings, and a seat close enough to feel the rhythm of the kitchen.

Team, Last night I had the chance to experience the Mercantile as a guest, sitting with Roberto, and I finally felt fully what I had always envisioned this place to be about.

What you created went far beyond a 7-course dinner. The food was exceptional, yes, but it was the connection, the energy in the room, the way you engaged with guests, shared stories, and brought people together that made it unforgettable. I watched guests exchange numbers, talk about food memories, and truly connect, and I watched all of you lead that experience in your own ways.

Seeing you cook, plate, collaborate, and take ownership of the night, I’m honestly in awe. Each of you showed your talent and your individual leadership, and it came together into something really special.

A refined chef’s tasting that ends with hugs, photos, and a conga line with new friends, that’s not something you can script. That’s something you create. And you did.

We’ll always keep refining and pushing to be better, that’s part of who we are, but take a moment to recognize what you accomplished last night.

We did that.

I’m proud of you, and I’m excited to keep going.

“Amazing experience at Babylon Mercantile!
We attended the chef’s counter wine dinner, and it was absolutely incredible. Each course was beautifully presented, and the flavors were outstanding—every dish had its own unique and delicious taste. The wine pairings were perfectly chosen and really elevated the meal.
