Last month I went down to Yunnan, along the border with Myanmar to look for Chinese moonshiners. Well we found em, and I got to shoot a bit of footage while learning firsthand how they do things. This ended up being probably one of the coolest trips of my life. Have blurred their faces in this vid as what they're doing is questionably legal at best, but like we say in the states "it ain't 'shine if you're paying taxes".

Part 2 of kickin it with moonshiners in rural Yunnan Province. I try a corn based baijiu called " bao gu jiu" made on an old school still. This is a solid state single step fermentation that's distilled on essentially a large stock pot still. The distiller has been making this alcohol for over 60 years, and his father and grandfather taught him how to do it. Distilling alcohol is a big part of local culture in the area along the border with Myanmar, where Wa minority people produce corn liquor, sugar cane distillate, and more, often in their own backyards.

Earlier this summer I went out to Shi Qian, in the mountains of eastern Guizhou. I went there specifically to try their local specialty mung bean noodles, called lu dou fen. There are several shops in Shi Qian making this dish, in a few different styles. I prefer dry mixed but many locals told me it is also great with soup. While this video features one shop, I ate these noodles at least 8 separate times at 3 different shops while filming this.
The two things that really make lu dou fen shine are the fermented wheat paste which adds a rich umami savory flavor that blends into the chili paste to coat the noodles, and the addition of mujiangzi, a local plant berry with a ton of essential oil compounds that give it a super bright citrus flavor. It's like a more floral lemongrass effect.

Earlier this month, I went to Shi Qian, in eastern Guizhou. The small mountain city is full of its own atmosphere, and makes for an incredibly chill summer vacation spot. Beautiful mountains, awesome cable cars, and maybe the best bowl of noodles I've ever had.

If u told me I might almost drown at Dragonboat festival I would have figured I fell off a boat, but part of Dragonboat festival in Shibing, Guizhou is the water dragon festival. While it's supposed to ward off drought it really just looks like a giant water gun fight. When you're the only forigeners in the whole city that water fight becomes more of a hunt.
Most fun day of the year. Maybe most fun day of my life. @athomeinguizhou and I survived.

I went out to 织金 Zhi Jin in Guizhou province to try and find a wonton shop that has been operating for over 100 years. Being open that long means you've got to be doing something right and they definitely are. This spot specializes in "ran" style wonton, where hot oil is poured over chili powder just before serving to create an incredibly fragrant chili oil right in your bowl. Easily the best wonton I've ever had, and I honestly didn't get as much good footage of the food as I should have because I was too interested in eating.

Yunnan is famous for mushrooms, both the magic kind and as a culinary staple. This mushroom hotpot I had in Pu'er was unreal. They just steamed mushrooms until a rich broth formed and then we chowed down.

Last weekend I went out to Shi Bing 施秉 in Guizhou province with @athomeinguizhou to ride on the world's longest wooden dragon boat. Shi Bing goes hard for this holiday. In addition to the largest dragon boat the local Miao people were on parade in their iconic colorful clothing. They also had music, fireworks, food, boat races, and some sort of duck catching competition.

Guiyang Suanfen. Fermented rice noodles which must be eaten the same day they're made. The owner of this shop has been serving suanfen for over 40 years. These ones were served with runny fried egg, crispy pork, and plenty of chili sauce. Strong contender for best breakfast in China.

This is my favorite chicken in Chengdu, 花椒鸡 aka Sichuan Peppercorn Chicken. Juicy, spicy and packed with that numbing tingling sensation. Wash it down with ice cold beer, or in this instance luzhou laojiao TouQu, a baijiu made by the same folks who make @mingriverbaijiu

Another baijiu review... Kind of. This time I'm reviewing the viral Moutai ice cream and checking out the Moutai store in Guiyang.
