Who pours the sake? In Japan, the customary answer is: not you. With wine, you pour your own. With a small sake cup, the traditional etiquette runs the other way: you pour for others and accept a pour in return. A Japan culture portal calls not pouring for yourself a golden rule. The practice is called お酌 (o-shaku), and one sake maker's guide describes it with a phrase, 差しつ、差されつ, "pouring and being poured", as a reciprocal gesture that builds bonds through mutual attention. That turns the level of the cup into a signal. The same guide says to offer a refill when the other person's cup has fallen to about a third or less, and two separate guides give about 80% (八分目) as the usual fill, rather than to the brim. Why is the cup small in the first place? Sources differ. One Japan culture portal says a small cup lets more people take a turn pouring; a drinks-industry guide says it slows the pace of drinking. Both describe the same custom, and neither settles the cause, so we leave that question open. This is a description of a custom, not a rulebook, and it varies from table to table. What is the green ball hanging outside a sake brewery? It's a sugidama (杉玉), a ball of Japanese cedar leaves hung under the eaves, also called sakabayashi (酒林). A fresh one goes up as the season's new sake is pressed, so it starts out green. Then nobody touches it. The leaves dry where they hang, and over the months the ball turns brown. That change has traditionally been read alongside the sake: green for new, brown for sake that has had time to mature. It's a reading rather than a measurement. It tells you roughly where the season is, not a date, a grade, or anything about a particular bottle. Wine has its own signals for a new vintage. Here, the notice is the ball itself, and its colour does the timekeeping, readable from the street before you ever see a label. If you passed one on a brewery wall, what colour would you hope to see? #sake #sakeculture #sugidama #japanesesake #杉玉 by @thesakeanatomy

Why is a ramen shop pouring sake like this?

Three bottles, one counter, and a bowl of ramen on the way🍜

Tonight's lineup at a neighborhood ramen spot in Tokyo:
• Niro by Maruishi Brewery (Aichi, est. 1690)
• Aizu Miyaizumi by Miyaizumi Meijo (Fukushima)
• Hanaizumi Yamadanishiki (Fukushima)

I went with the Miyaizumi. Fresh, bright and crisp on the palate. That kind of clean acidity and lift is exactly what a rich, savory bowl asks for: it resets your mouth between bites instead of competing with the broth.

Pairing sake with ramen is still rare, but the logic is simple. Rich, salty, fatty food tends to love a sake that cleanses rather than one that adds more weight.

A note on how I share these: this isn't a recommendation. It's one bottle, one night, one table. Taste is personal, so I just want to show what's in the glass and why it behaves the way it does.

So tell me, what would you pair with a bowl of ramen? 🍶

What is kimoto sake, and how does a tank nobody sterilises stay clean?
Every sake starter must turn acidic before yeast goes in. Sake yeast thrives in acid; most spoilage organisms don't. The modern method gets there in one step: brewing-grade lactic acid goes into the water on day one. Kimoto and yamahai add none. The acid has to be made inside the tank, by bacteria nobody put there, which is why the process takes about a month instead of a fortnight.
The usual explanation is a relay. The mash opens cold, around 5–7 °C, where little can grow, and cold-tolerant bacteria reduce nitrate from the brewing water to nitrite. Then the brewer warms the mash a few degrees at a time. Rice dissolves into sugar, lactic acid bacteria multiply on it, and their acid finishes off the nitrate reducers before them. Each stage removes the one before it.
Two parts of that account have shifted. Nitrite used to get the credit for clearing wild yeasts; current reviews credit a combination of low temperature, low pH, lactic acid, high sugar, and nitrite. And the relay is less fixed than diagrams suggest. When a national brewing institute sequenced bacterial DNA at five breweries, the transitions fell into three different patterns, and only one matched the textbook. A study at a brewery on another continent found a different lactic acid bacterium dominant throughout, and the sake finished normally.
What held across all five was the ending: the same rod-shaped species dominant late, doing most of the acidification. Different casts, same last scene. The method isn't a recipe for a sequence of microbes but a sequence of conditions (cold, then warmth, then acid), and whoever in the building can meet them is welcome.
None of this makes kimoto better, or a reason to choose one bottle over another. It's a different answer to a problem every brewery must solve. If you've had kimoto or yamahai beside the same brewery's standard bottling, what did you notice first, the acidity or the weight?

What sake goes with charcuterie, and why kimoto is the answer, explained by chemistry rather than tradition.
Start with the board, not the bottle. A charcuterie board runs two different machines at once. Dry fermented sausage is soured by lactic acid bacteria eating sugar, which drops its pH, sets the proteins, and stalls pathogens. Shelf-stable sausage must land at pH 5.0 or below. Dry-cured ham isn't fermented at all. Salt stabilises the muscle's own enzymes, and they take the protein apart over months. Free amino acids climb from around 506 to 1,489 micrograms per gram between six and twenty-four months, glutamic acid leading.
Now the sake. A starter mash must turn acidic fast or spoilage organisms win. The modern 速醸 (sokujō) method, about 90% of production, adds food-grade lactic acid on day one and finishes in about fifteen days. 生酛 (kimoto) and 山廃 (yamahai) wait for the brewery's lactic acid bacteria to make the acid themselves, which takes about thirty. Same destination, different roads, and the road matters.
Because sokujō sits near pH 3 from the first hour, koji's acid protease works at its ideal, and rice protein is hydrolysed down to fragments of two or three amino acids. Kimoto begins near pH 6, where that protease is nearly idle. Around days seven to ten, the mash liberates large peptides instead: five size groups between 12 and 55 kDa, four absent from the modern starter. That is protein stopped halfway down, and structurally it's what aged ham is made of: peptides, including the γ-glutamyl group behind kokumi.
Brewers already had a word for it: 押し味 (oshiaji), the pressing weight kimoto leaves on the palate. One caveat: the common claim that kimoto contains more amino acids than sokujō hasn't held up when measured. The peptides are the real story.
So the pairing isn't "fermented meets fermented." It's bacterial acid for the sausage and half-dismantled protein for the ham, and kimoto carries both. Next time you build a board, does the salami or the ham decide it?

What actually starts fermentation in a bottle of sake? It isn't yeast — not first, anyway. There's a step that happens before yeast ever gets involved, carried out by a mold you've almost certainly already eaten: Aspergillus oryzae, known in Japanese as kōji (麹). It's the same organism used to make soy sauce, miso, mirin, and rice vinegar — grown on different substrates, doing a similar kind of work each time, under a different name in each aisle of the pantry. Here's why sake needs it and wine doesn't. Grape juice already holds fermentable sugar, so wine's yeast can get straight to work. Rice holds its carbohydrate as starch instead, and yeast can't ferment starch directly. Koji solves that: grown across steamed rice, it secretes amylase enzymes that break the starch down into glucose and maltose, sugar yeast can then use. In a sake tank, that conversion and the yeast's fermentation run side by side, in the same vessel, at the same time — a step wine's process skips entirely. That shared biology is also why sake sitting next to soy sauce, or sake next to miso, tends to feel so natural on a table. It isn't a stylistic coincidence. In 2006, Japan's Brewing Society made the relationship official, naming Aspergillus oryzae the country's "national fungus" — the only microorganism to hold that title — in recognition of exactly this cross-industry role. Next time a pairing feels intuitive before you can explain why, it might be worth asking what's actually doing the work behind both ingredients. #sake #nihonshu #koji #fermentation #麹 by @thesakeanatomy

Is it OK to put ice in sake? Start with a stranger question: how much water is already in the bottle?
Sake doesn't come off the press at drinking strength. In the mash, mould turns starch into sugar while yeast turns that sugar into alcohol, in the same tank. Fermentation runs unusually far, and the pressed liquid sits around 18–20% ABV. Almost none of it ships that way. Brewers add water afterwards, and the step has its own name: 割水, wari-mizu, the dividing water. It brings the alcohol down to about 15–16% and pulls a concentrated liquid back into proportion. Japan's National Research Institute of Brewing puts undiluted junmai at 18.3% on average, while commercial bottles go out at roughly 15.
That changes how to read 原酒, genshu. It's usually translated as "undiluted," and people often take it as the purer, more serious option. What it actually marks is a skipped step. It's a voluntary labelling term for sake whose alcohol wasn't adjusted with water after production. The fine print even allows an adjustment under 1% ABV, because batches finish at slightly different strengths.
So the reflex that ice is vandalism has the sequence backwards. Melting ice does what wari-mizu did: it lowers the alcohol and loosens a concentrated liquid, only in your glass rather than in a tank in January. The brewery makes the call at 15%. Genshu hands you the dial instead, which is a different design decision, not a better one.
None of which means every bottle wants ice. It means the water was never the intruder, just an ingredient. The only question is who adds the last of it, and where they stop.
Next time you order something at 18%, do you want the brewer's ending, or your own?
