My foolproof sourdough recipe ⬇️

Ingredients:
500g strong white bread flour
365g lukewarm water
100g peak starter
10g salt

Method:
- mix all ingredients together to a shaggy dough
- take a small pinch of dough and place it in a shot glass filled with water
- place your dough in a draft free place along with the shot glass with water/sample of dough in and after 30 minutes preform a coil fold
- rest for 30 mins and then preform another coil fold and rest for 30 mins before doing a 3rd and final coil fold
- rest your dough until the sample piece of dough floats in the shot glass (this should take around 1.5-2hrs but can be shorter longer depending on your environment)
- once the sample piece of dough is floating (you can discard this along with the water), turn your dough out onto a surface and Preshape into a tight ball. Cover the dough and rest for 30 mins
- flour a banneton, shape your dough and place in the banneton, cover and into the fridge for an overnight proof (you can push this for up to 48hrs)
- the next morning, preheat a cast iron on the hottest setting in your oven
- after 15 mins, place your dough from the fridge into the freezer to firm up
- after 20 mins in the freezer, remove, turn out onto a piece of baking paper, score and place into your preheated cast iron
- spray the surface of the dough with water, lid on the cast iron and into the oven
- turn the temp of the oven down to 250d fan and bake for 35 mins
- after 35 mins, turn the temp down to 220d fan and remove the lid
- leave to cool before slicing in and enjoying
