Modern Italian Restaurant | Carlsbad, CA
Rooted in tradition, seasonality & gathering

POSTS STORIES REELS

Carlsbad’s newest Italian destination is bringing serious Michelin pedigree to North County 🍝✨

Led by Michelin-trained Chef Riccardo Bilotta, Verise makes all their pastas fresh in-house every morning, and the execution is evident in every single bite. The non-negotiable order is the Cheese Wheel Pasta—handcrafted rigatoni tossed tableside right inside a massive aged Parmigiano Reggiano wheel with decadent black truffle cacio e pepe. The pasta has that ideal toothsome chew, coated in a silky, rich emulsion that clings perfectly to every ridge.
Between the tableside theatrics, the handmade pasta program, and the dining room opening out into an olive grove, this is an immediate North County must-visit.

📍 Verise — 5420 Grand Pacific Dr, Carlsbad, CA (at The Westin Carlsbad Resort & Spa)

Now open in Carlsbad: located inside the newly opened @hotelsoleacarlsbad — an Autograph Collection hotel — @verisecarlsbad draws inspiration from the cuisine and culture of Central Italy, reimagined through a Southern California lens.
Concepted by Chef Riccardo Bilotta (two-Michelin-star Il Pellicano in Tuscany and three-Michelin-star El Celler de Can Roca in Spain) and developed in collaboration with Hotel Solea’s Resort Chef Jason Luke, the menu highlights handmade pastas, wood-fired pizzas, and regionally inspired dishes built around seasonal ingredients.
The greenery-lined dining room opens onto a garden patio dotted with olive trees — a quiet nod to Tuscany.

Pastas are made fresh each morning, and thoughtful details appear throughout, from a tableside affogato and cheese wheel service to a roaming amaro cart. It’s the kind of place that naturally shifts from sunset drinks on the patio to long dinners inside.

What we ordered:
✨ Verise bruschetta
✨ Insalata alla cesar
✨ Gnochetti di patate
✨ Cacio e pepe
✨ Pescato del giorno (seabass)
✨ Nero cocktail
✨ Athletic IPA (on draft)

At Verise, golden hour light filters through olive trees, crusts come out with a blistery char, spritzes glow orange, fresh-shaved parm stacks into little mountains on meatballs… and somehow, it’s all unfolding in a hotel, right next door to LEGOLAND. @verisecarlsbad

Modern Italian restaurant Verise just debuted inside the reimagined @HotelSoleaCarlsbad (formerly the Sheraton). And whatever you picture when you hear “hotel restaurant,” it’s almost certainly not this. Inside: velvet booths and a warm dining room. Outside: shady trees, peeks of ocean, and a garden that pulls the whole space open. Verise lands somewhere between an Italian home and a neighborhood trattoria you wish you lived next door to.

In the kitchen, Chef Riccardo Bilotta (of Michelin-starred kitchens across Europe) and Chef de Cuisine Kevin Martinez are working from Central Italian traditions, pulling in whatever Southern California is doing best that week. Lemon ricotta pancakes. Spaghetti al pomodoro with burrata and basil. Diavola pizza with spicy salami and ricotta. Mediterranean octopus with cannellini beans and agrodolce peppers. The kind of menu where you order one thing and immediately add more once you see what other tables are digging into. Verise runs all day—breakfast, lunch, and dinner—so it works whether you’re stopping in early or settling in to take your time.

The rest of Hotel Solea is there if you’re due for a staycation: pool, spa, the coast a few minutes out, and a direct path into LEGOLAND. But Verise stands on its own as a North County dinner destination.

Go now, before everyone catches on.
