Crispy chicken thighs, pancetta pan sauce, rice pilaf & roasted asparagus. 🍗👌

I seared the chicken skin in beef tallow in a cast-iron skillet, flipped them, and finished them in the oven. While they rested, I made a quick pan sauce in the same skillet.

I cooked pancetta in the leftover chicken fat, added shallots and fresh thyme, then deglazed with white wine. I added chicken stock and a touch of lemon juice, let it reduce, then stirred in a splash of cream. Finished it off the heat with butter and freshly cracked black pepper. No extra salt needed, the pancetta was salty enough.

A solid weeknight dinner right here. ✌️ by @wolfgang_chank

Been meaning to post this from last weekend at Warped Tour in Long Beach. It’s crazy to think I was seeing so many of these bands 20 years ago when they’d come through Philly, and now I’m still getting to enjoy them all these years later. It brought back a lot of great memories and reminded me why this music has always meant so much to me.

Huge thanks to @gregglillie for the hospitality and @nickdelouise for making it happen. Until next time✌️🌴🎸 #warpedtour #longbeach #socal #livemusic by @wolfgang_chank

Sometimes the simplest dinners are the best. Italian sausage & cavatelli tossed in a light white wine, garlic, and olive oil sauce with a side of roasted broccoli. 🍝🥦 #homecooking #weeknightdinner #cavatelli #dinnerideasُ by @wolfgang_chank

Some eats from last night and tonight. I made Chicken Milanese for the family in Cape May, and tonight I made the shishito peppers. Mom made the seafood pasta, and Dad made the pork chops and pizza. Happy Fathers Day!👌🍗💨🔥 #HomeCooking #FamilyDinner #CapeMayEats #FoodieLife by @wolfgang_chank

Homemade Blackened Chicken Caesar Salad 🔥🥗

@anna_ciancaglini made the Caesar dressing from scratch… anchovies and all. I can’t stand them, but they make the dressing. She handled the salad, I handled the blackened chicken. What a banger it turned out to be! 🔥🍗🥗 #blackenedchicken #caesarsalad #homemadefood #foodie #homecooking by @wolfgang_chank

There’s nothing better than crispy chicken cutlets topped with a fresh homemade tomato salad 🔥🍅✌️#chickencutlets #homecooking #foodie #easyrecipes #freshingredients by @wolfgang_chank

Smoked chicken thighs 🔥💨 with a fresh spring salad
@anna_ciancaglini came through with the salad: spring mix, red onions, fennel, strawberries, walnuts, goat cheese & a homemade balsamic vinaigrette.👌🍗🥗 by @wolfgang_chank

Smoked a pork butt for 8 hours yesterday 🔥💨 Made some baked mac & cheese to go with it, Anna came through with a fresh sourdough loaf, and Chloe got a fresh groom. Doesn’t get much better than that 🐷🧀🍞💪 by @wolfgang_chank
