ECLAIRS!!!🧈🍫 ➡️pâte à choux is a type of french pastry dough cooked on the stove to draw out moisture (pastry does not sink=more space for filling!!!!) ➡️choux should be SUPA glossy at the end ➡️the most important concept for this recipe is tempering!! making sure the temperature of the dough+cream does not scramble the eggs ensures a smooth mixture! ➡️make sure rack is in middle of oven before baking, this guarantees even baking☝🏽 ➡️i prefer to prep pastry cream the night before… this way it’s completely cool before piping. ➡️store eclairs @room temperature in airtight container for up to 48 hours!! HAPPY SATURDAY AND HAPPY BAKING👩🏽‍🍳👩🏽‍🍳!!! by @writetowhisk
BROWN BUTTER BANANA BREAD MUFFINS🍌 5 overripe bananas 6 tbsp unsalted butter, browned 2 tbsp neutral oil or 1/2 c yogurt 2 large eggs 2 tsp vanilla 1 cup brown sugar 2 cups flour 1 tsp baking soda 2 tsp cinnamon, 1 tsp nutmeg Mash the bananas in a small bowl and set aside. Combine your flour and baking soda in another bowl and set aside. Cream your butter and sugar by whisk. Add your eggs and vanilla. Combine. Add your oil/yogurt and mashed bananas. Slowly add in your dry. Transfer to greased tin. loaf: 350 for 50 mins muffins: 375 for 15-18 min ➡️these were gf! You can sub gf flour 1:1. If subbing, add 1 tsp baking powder for structure ➡️you can also add icing!! 3 tbsp unsalted browned butter 1 3/4 cups powdered sugar, sifted 1 tbsp milk or so 1 tsp vanilla pinch of cloves enjoy warm+with good company🤓 by @writetowhisk
WHAT TO DO WITH THE LAST OF THANKSGIVING LEFTOVERS😁 lemon white wine chicken!! 🥘 ➡️you can also make just the sauce+add turkey🍗 ➡️great way to use up sides that don’t go as fast (like any vegetable ever) ➡️takes 30 minutes to prep+can sit in fridge for up to five days! hope your break was restful! happy saturday and happy eating🍋 by @writetowhisk
RED PEAR+GOAT CHEESE FASTRY WITH HONEY AND THYME🍐🍯 ➡️a high maintenance snack, but very well worth the time ➡️most pear varieties work for this, but i prefer slightly unripe pears for some texture ➡️you can easily make these more savory with a higher ratio of goat cheese to marscapone+less honey+cured meat ➡️its a fastry because the puff pastry is not made from scratch, recipe for homemade puff pastry to come! enjoy warm or @room temp for up to two days. happy break!!🍁🥐 by @writetowhisk
south african pancakes🍽️ 🍋we grew up with these!!!! thank you @careyswartz for this recipe💗 🥞these are like crepes, but thicker 🥞serves 3-4 🥞traditionally served with a squeeze of lemon juice+cinnamon sugar 🥞best served immediately, can put in fridge for up to a day if needed happy thursday and HAPPY EATING🍋 by @writetowhisk
SUMMER CORN CAMPANELLE🦐🌽 this is a PERFECT summer night dinner when you have a little more time on your hands✌🏽 finish with burrata, cilantro, lemon zest, finishing salt and freshly ground black pepper! serves 5. enjoy☀️🥂 by @writetowhisk
RED VELVET+CREAM CHEESE FROSTING‼️🍰 NOTES ➡️white vinegar (acetic acid) reacts to baking soda (sodium bicarbonate) to create carbon dioxide, giving red velvet co2 bubbles➡️airy batter➡️fluffy cake ➡️in addition, buttermilk and cocoa powder give red velvet it’s signature flavor, with a subtle tang at the end. this ensures the cake isn’t simply chocolate cake dyed red!! ➡️keep in refrigerator after 4-5 hours @room temp, since our frosting has cream cheese in it👆🏼 ➡️garnish however you’d like!! white chocolate, strawberries, nuts, etc✨ enjoy for up to three days in fridge!! HAPPY SUNDAY AND HAPPY EATING!!👩🏽‍🍳 by @writetowhisk
EASY DESSERTS➡️victoria sponge cake!! 🍰 ➡️a victoria sponge is always layered with whipped cream+jam ➡️it also uses self-rising flour (as opposed to AP flour+rising agents) and contains no oil (we get additional fat content from the heavy cream). ➡️i used a glass to cut out circles for mini cakes, but feel free to use a cake pan if you’re keeping it as one cake! ➡️store up to 24 hours in the fridge if pre-assembled, and up to 48 hours if cream and cake is kept separate!! happy baking!!👩🏽‍🍳👩🏽‍🍳 by @writetowhisk
TIS THE SUMMER OF MAKING YOUR OWN BREAD… here’s how!!🍞🍞 add 7g active yeast to 1 1/2 c warm water+2 tsp sugar. stir and add to bowl of 3 3/4 c flour and a tsp of salt. knead for 5-8 minutes to activate gluten!! you can use a stand mixer with a dough hook too. after kneading, place your dough in a large greased bowl+cover with plastic wrap. keep in a warm place (above the stove is where i usually keep mine!) your first proof is where the bulk of fermentation happens.. minimum of two hours! i did mine overnight for a more developed flavor so after an hour, i put the bowl in the refrigerator for a slow proof. the second proof is where we shape our bread! in either a greased dish OR floured dutch oven, place dough in center. leave room for it to expand! cover again and proof for 45 minutes. bake 30 minutes at 450!! sprinkle sea salt before baking!! it should sound hollow when you knock on it… thats how you know its done!! enjoy yo crusty bread- sweet or savory. happy saturday and happy bread making!! by @writetowhisk

TIRAMISU☕️☕️ +espresso martinis😃🍸 whip 1 1/2 c cold heavy cream, 1/3 c sugar, and vanilla until stiff peaks form. fold in 8oz room temp marscapone soak ladyfingers (italian biscuits, like a cross between a sponge cake and cookie) in a mixture of hot espresso and coffee liqueur (3:1 ratio) layer cream and ladyfingers, 2-3x. refrigerate overnight+serve with a dusting of cocoa powder!! espresso martini (no jigger or shaker needed!!) serves 4 3 shot glasses vodka (and some) 3 shot glasses cold espresso 2 shot glasses kahlua 2 shot glasses simple syrup (equal parts water+sugar. boil until sugar has dissolved, let cool 10 minutes! i added a cinnamon stick in mine) shake with ice. strain+serve cold. happy thursday, happy drinking, and happy eating!!! by @writetowhisk
