weirdly turned 30 this year. new job. moved to South West. been cooking a lot. I might need a pair of new balances with the amount of yard work i’ve been doing. I love Loosie. Lamb Manti.
local lamb. harissa kadhi. local fennel.

basically… I threw the braised lamb in the grinder with some dates & walnuts & chiles, then wrapped it up into a cute lil purse. I steeped buttermilk, XO, & harissa purée, then strained it so all the bby chunkies of lobster & charcuterie were gone. blanched some fennel fronds then squeezed the fuckin water out, & emulsified that with some olive oil.

it’s pretty, it’s tasty, & it’s a very limited supply.
