It’s here!!! Finally!! After years of research, tasting, interviewing, and writing, I’m THRILLED to release “The Craft Chocolate-Lover’s Guide to Paris” 🥳

What makes this guide special is that it’s specifically geared towards bean-to-bar enthusiasts. In addition, it’s published on the @salteteguides platform, which interfaces with Google, so you can see suggested itineraries on Google Maps and locate the closest featured spot by clicking “what’s near me” on the guide. How cool is that?

You’ll also find detailed introductions for each chocolate company (for chocolatiers, this includes the name of the couverture suppliers), recommended products, and four different itineraries. Also, check the FAQ for recommendations on the best times to travel and tips on navigating public transportation.

“What could go wrong during tasting?” This is what a workshop attendee asked me last August. The truth is, EVERYTHING can go wrong during an event — a snow storm may cause you to cancel an event, or you may spill wine on a tasting sheet.

In this new series, I’ll share things that went wrong at a @37chocolates tasting and how I figured a solution out. For this first installment, I’ll let you hear the dramatic encounter I made in a bag of unroasted cacao beans 🐛 I learned to pick my suppliers a little more wisely since 😄 by @37chocolates

New bar alert at @philtercoffee! While dark chocolate and sea salt may be a popular combination, it’s not that easy to pull off.

Enter @standoutchocolate, a Swedish maker I’ve admired ever since I tasted their Uganda bar. This 66% dark chocolate with sugar kelp and sea salt is smooth, creamy, with a touch of umami and the right amount of salt. The finish is somehow sweet and you won’t feel like tasting anything else afterwards. This has been a very popular bar at my recent tastings and you’ll understand why after one bite. taken in Philter Coffee by @37chocolates

Woke up early today to harvest Pinot Gris grapes at @innatgracewinery! It was a perfect day for picking, with gentle sun and zero humidity. The first couple of hours were easy, then I needed a break to keep going. It’s really cool to be involved in the making of a food product, especially one I’ll likely work with at a pairing next winter. Thanks @andrewjyingst for the invite! by @37chocolates

It’s now the 4th time I attend the @thephillycandyshow and I swear it gets better every year. The 2026 edition took place in Lancaster, PA, and I headed there to lead a workshop on how to “Boost Your Sales in 5 Min a Day”. This talk covers a lot of business basics, like developing a mission statement and values, as well as a snapshot of the current chocolate trends. I always, always start there because you need a strong foundation to build upon.

I also caught up with Yeli of @yelichocolate, whose talk on building new revenue streams was one of the most inspiring and impactful I ever attended. Plus, she’s one of the most generous human being I’ve met.

It’s been 10+ years since I left my corporate job, yet I’m still friends with my former manager Teresa @sandor610. Over the years, I’ve lost track of how many craft chocolate bars she brought me from her travels. Last year, she returned from Arizona with @orinoco.chocolates in her bags!

More recently, her daughter Fran brought me three wonderful bars from Peru, a country bursting with amazing cacao.

The 95% and 85% by Yanary are light in color and incredibly mild, courtesy of the delightful Chuncho Blanco. The 95% is my favorite of the two.

The 70% by Caral surprised me! It hit me with a fruitiness I didn’t expect. Thank you Fran and Teresa for these wonderful bars. by @37chocolates
