Conversation with Dwayne Johnson “Maui”
We came together to celebrate the premiere of Moana—a love letter to and celebration of Polynesian culture. 🌊🌺

Never in my wildest dreams did I think I would sit down with @therock Dwayne Johnson and talk about Samoan and Polynesian food, let alone bring him the apple pie pagi popo (pani popo) he first commented on and finally get to share it with him.

I brought some of my most popular dishes to the table: my Hawaiian laulau x palusami fusion, apple pie pagi popo, Chantilly pagi popo, and kalua pig.

Dwayne shared that he had noticed my videos and the way I take dishes he grew up eating of his Samoan culture and give them my own twist and flair. We talked about how Moana is his love letter to Polynesian culture and how the film continues to open doors for the world to see, celebrate, and embrace the people, stories, food, and traditions.

One of the most meaningful moments was hearing him say I have the makings to be an iconic chef. He told me he had never heard of someone intentionally fusing Polynesian dishes with other cultures in this way to spread Polynesican cuisine to the world. 

That meant more to me than I can explain.

I am proud to take up that mantle—to honor where these dishes come from, push the craft forward, and continue spreading awareness of Polynesian cuisine to people who may be experiencing it for the first time.

This was an absolute dream-come-true moment for me. Thank you, @disneystudios, for giving me the opportunity to share my food, my story, and my love for the culture.

Chuck Roast Kalbi 🔥🐄🤠

Today I am letting you in on a local Hawaii secret — using thin-sliced chuck roast for boneless kalbi.

Short rib can get expensive, but chuck roast gives you that same sweet, salty, garlicky kalbi flavor for way cheaper. It’s more cost-effective, easy to cook, and perfect for meal prep all week. 

I get a lot of questions on if it is dry but trust me, if its thinly sliced, and cooked right, its just as tender as kalbi and still packed full or umami and that beautiful char. Don’t sleep on Uncle Yoshida sauce, that is THE BEST in the game and a secret too. 

Recipe 

Ingredients

* Thin-sliced chuck roast that you can get from Costco
* 1/2 bottle @mryoshidas Mr. Yoshida’s sauce
* 3 cups minced garlic

Knife: @montanaknifecompany 
Charcoal: @cowboycharcoal 

Instructions

1. Marinate your thin-sliced chuck roast overnight or for at least 30 minutes
2. Fire up your grill nice and hot
3. Grill both sides until you get that beautiful char.
4. Top with green onions, sesame seeds, side Mac salad and rice
5. Pack up your leftovers for your weekly meals

This is a budget-friendly boneless kalbi hack that still brings all the Hawaii plate lunch flavor.

Moana Hawaii Celebration 🌊🌺

I’m still speechless at what I just did these last few days! First and foremost, thank you @disneystudios for the opportunity to not only celebrate and learn about the rich Polynesian culture in the world of Moana, but also share my love of Polynesian food, cuisine and special dishes with @therock . It was truly an honor to talk about food and how important it is in culture and tradition. 

I’ve taken up that mantle to bridge the gap of discrepancy between mainstream culinary and Polynesian dishes and flavors. I’m even more fueled now to keep going! There is still so much for me to learn so that I can share. I am so pumped up to continue to grow!

Never in my wildest dreams did I think what I do would ever be embraced nor allow me to pursue my dreams. All praise to Jesus!

I got to hang out with some incredible people and make new friends! Special shout out to Zach for believing in me to bring me on and @bitelogic who helped keep me calm and helped me cook with limited kitchen time to make sure everything went smoothly!

Recipe

Ingredients

* 2–2½ pounds @ bavette steak
* ½ cup soy sauce
* 1 tablespoon clear soy sauce
* 3 tablespoons grated pineapple 
* ¼ cup brown sugar
* ¼ cup gochujang
* 2 tablespoons gochugaru
* 2 tablespoons sesame oil
* 1 tablespoon rice vinegar
* 8 cloves garlic, minced
* 1 tablespoon grated ginger
* 4 green onions, thinly sliced
* 2 teaspoons toasted sesame seeds

Instructions

1. Combine the marinade ingredients
2. Slice your bavette steak against the grain
3. Place the sliced bavette steak in a resealable bag or shallow container and pour the marinade over it
4. Marinate in the refrigerator for overnight or minimum 1 hour
5. Remove the steak from the marinade and lightly pat the surface dry so it can develop a good crust.
6. Heat a grill or your stainless-steel frying pan over high heat. Cook the bavette for approximately 4–6 minutes per side, depending on its thickness.
7. Serve with additional sliced green onions and toasted sesame seeds. 

Sweet, savory, tender, and packed with caramelized flavor—this one is definitely worth making a mess for. 🔥🥩

Shoyu Chicken 🐓🌶️🔥

Shoyu chicken is one of those local-style comfort dishes that always hits. This version gets a little kick from Thai chilies and then gets finished in the air fryer so the skin turns crispy, sticky, and caramelized.

Recipe:

5 bone-in, skin-on chicken thighs @costco 
1 cup shoyu
1/2 cup brown sugar
2 Tbsp minced garlic
2 Tbsp chopped ginger
1/4 cup chopped green onions
2 Tbsp chopped Thai chilies

Instructions:

1. Add the shoyu, brown sugar, garlic, ginger, green onions, and Thai chilies into a pot and mix until the sugar starts to dissolve.
2. Pat dry then place the chicken thighs skin side down into the marinade.
3. Bring to a boil then simmer.
4. Cover and let it gently cook 30-45 minutes or until the chicken is tender and cooked through.
5. Remove the chicken from the pan and place it on a rack or tray. Pat the skin dry so it crisps up better in the air fryer.
6. Let the sauce simmer uncovered for a few minutes until it thickens into a glossy shoyu glaze.
7. Place the chicken in the air fryer skin-side up at 400°F for 6–10 minutes, or until the skin gets crispy and caramelized @instantpotofficial 
8. Spoon the shoyu glaze back over the chicken and finish with extra green onions and sesame seeds.
9. Serve with white rice and Mac salad.

Sweet, salty, garlicky, a little heat, and that crispy skin from the air fryer. Save this one for your next meal!

‘Otai Ice Cream 🍉🍍🥥

I wanted to take a traditional Polynesian drink/dessert and give it a fun little twist by turning it into ‘otai ice cream.

The viral watermelon ice cream trend looked cool, but freezing a whole watermelon, pouring cream into it, and scraping forever? My hands were cold, my arm was tired, and honestly… no thanks. 😂

So I made it easier.

Sweet frozen watermelon blended with grated pineapple, coconut milk, coconut cream, sugar, and shredded coconut. Thick, cold, creamy, and full of island flavor. 🤙🏽

Food processor: @cuisinart 

Ingredients:
* Watermelon, cut into chunks and frozen
* Fresh pineapple, grated
* 1/2 cup coconut milk
* 1/2 cup coconut cream
* 1/2 cup sugar
* Shredded coconut

Instructions:
1. Cut your watermelon into pieces and freeze until solid.
2. While the watermelon freezes, grate your pineapple.
3. Mix the grated pineapple with coconut milk, coconut cream, sugar, and shredded coconut to make the ‘otai cream.
4. Add the frozen watermelon pieces to a food processor or blender.
5. Pour in the ‘otai cream 1/2 cup at a time and blend until thick, creamy, and still cold.
6. Serve right away for a soft-serve texture, or freeze a little longer if you want it firmer.
A traditional Polynesian favorite with an ice cream twist. 🍉🍍🥥

Beef Lu’au Stew 🍃🐄🥩

One of the most comforting dishes you’ll find in Hawaiʻi. Simple ingredients, low effort, and packed with rich, savory flavor.

I kept this one easy by searing my beef short ribs in beef tallow, then letting everything finish in the crockpot until the meat was fall-apart tender. Served alongside fresh lomi and poi, this is the kind of meal that reminds me of home. 🤙🏽

Ingredients:
2 lbs beef short ribs, removed from the bone and cubed @costco 
1 lb luau leaves, chopped
2–3 Tbsp beef tallow @snakeriverfarms 
1 large sweet onion, sliced
1–2 tsp Hawaiian salt (plus more to taste)
Salt, pepper, garlic seasoning for the beef
1 cup water
2 cups beef broth

Instructions:

1. Season the beef short ribs with SPG.
2. Heat a frying pan over medium-high heat and melt the beef tallow.
3. Sear the beef in batches until browned on all sides.
4. In the same pan, sauté the sliced onions until softened.
5. Add the onions to your crockpot, followed by the chopped lu’au leaves and seared beef.
6. Pour in the beef broth until it nearly covers everything.
7. Cook on HIGH for 4 hours, or until the beef is fork tender and the luau leaves have completely broken down.
8. Taste and adjust with more Hawaiian salt if needed.
9. Serve with fresh lomi and poi

My Super Easy Kalbi Recipe

This is my series: dishes you should know how to cook if you are from Hawaii Kalbi. It’s super easy, 5 ingredients and is full of flavor and umami. Soft, tender and a perfect bite.

Ingredients:
@kikkomanusa shoyu
White sugar
Garlic
Sesame seeds
Honey

Equipment
@cowboycharcoal 
@montanaknifecompany 
@fyrstarter 
@bbq_dripez 

Recipe:
1. Mix one to one ratio of sugar and shoyu (example 1 cup to 1 cup)
2. Add in 1/4 cup of garlic, 2T seasme seeds and 2T honey
3. Marinade overnight or a minimum of 30 minutes
4. Light your Cowboy Charcoal and sear off your kalbi until it has that beautiful char
5. Serve over a bed of rice with seasme seeds and green onions
6. Enjoy your meal to take you back as a kid growing up in Hawaii

Apple Pie Pagi Popo w/ The Rock 🇼🇸🇦🇸

Dreams do come true!

When I posted my apple pie pagi popo a year ago, I never expected it to create the collab of a lifetime with @therock . 

I brought my most popular Polynesian fusion dishes: hawaiian laulau x palusami, chantilly pani popo,and kalua pig sliders.

When I set out to create and elevate Polynesian dishes, I set my eyes beyond the reef but never knew it would open a door like this! 

Recreating my apple pie pagi popo with Dwayne was a dream come true. And to surprise him with a pisupo manicotti, a Samoan and Italian fusion, and see his reaction was priceless.

Thank you @disneystudios for creating this opportunity and don’t forget to go and see Moana in theaters this Friday!

Meat Jun 🥚🥩🍚

Meat Jun is a Korean-style dish you might not actually find in Korea because it was created in Hawaii — thin slices of beef, marinated, coated in flour and egg, then pan-fried until golden. 🔥

It’s simple, nostalgic, and so good served over rice with mac salad, and that sweet-tangy dipping sauce.

Where is the best meat jun on the island?
Mine is Yummys or the one in Salt Lake I use to go after school (I forgot the name 😅)

Meat Jun Recipe

Ingredients

For the beef:

* 1 to 1 1/2 lbs thin sliced ribeye or NY strip
* 1/2 cup soy sauce @kikkomanfs 
* 1/2 cup sugar
* 1 Tbsp minced garlic
* 1 tsp grated ginger
* 1 Thai chili, minced optional
* 1 Tbsp rice vinegar
* 1 tsp sesame oil
* 1 cup flour
* 3 to 4 eggs, beaten
* Oil for frying

Dipping Sauce:

* 1/4 cup soy sauce
* 1 Tbsp sugar
* 1 Tbsp rice vinegar
* 1 tsp sesame oil
* 1 tsp minced garlic
* 1/2 tsp grated ginger
* Thai chili optional
* Green onions for garnish

Instructions

Slice the beef thin, or use pre-sliced ribeye or NY strip.

Mix soy sauce, sugar, garlic, ginger, Thai chili, rice vinegar, and sesame oil. Add the beef and marinate for 30 minutes.

Dredge each slice of beef in flour, then dip into beaten eggs.

Fry in an oiled pan over medium heat until it’s golden on both sides.

Teriyaki chicken is a staple local dish and it’s also cost-effective, easy to cook, and perfect for meal prep all week. All you need to do is marinade and cook, that easy! Garlic shrimp is a Hawaiian-style local dish

This version is buttery, loaded with garlic, and has that crispy shrimp truck coating that keeps you coming back for one more bite. Serve it with white rice, mac salad, and a squeeze of fresh lemon for the full plate lunch experience.

Recipe

Ingredients

* 1 package @costco raw deveined shrimp
* 1/2 cup butter
* 1/3 cup minced garlic
* Juice of 1 lemon
* 4 tbsp butter (for cooking the shrimp)

Coating

* 1/4 cup flour
* 1/4 cup cornstarch
* 2 tbsp @kindersflavors Cowboy Butter Seasoning
* 2 tbsp Kinder’s The Blend Seasoning
* 2 tbsp smoked paprika

To Serve

* White rice
* Hawaiian-style mac salad
* Lemon wedges

Instructions

1. In a skillet over medium-low heat, melt 1/2 cup butter. Add the minced garlic and cook until fragrant and lightly golden, about 3–5 minutes. Squeeze in the juice of one lemon, then remove from the heat and set aside.
2. In a large bowl, combine the flour, cornstarch, smoked paprika, Kinder’s Cowboy Butter seasoning, and Kinder’s The Blend seasoning.
3. Pat the shrimp dry, then toss them in the seasoned flour mixture until evenly coated.
4. Heat 4 tablespoons butter in a large skillet over medium-high heat.
5. Add the shrimp in a single layer and cook until golden brown, about 2–3 minutes per side.
6. About halfway through cooking, pour in the reserved garlic butter mixture and continue cooking until the shrimp are fully cooked and coated in that buttery garlic sauce.
7. Serve immediately with white rice, Hawaiian-style mac salad, and fresh lemon wedges.
