What’s up raspberry glazed brownies!
First mixed oil (mix of avo and olive) and white sugar with some molasses in a bowl. Whipped up some aquafaba until peaks w a pinch of cream of tartar and folded that in w some vanilla. Then flour, light and dark cocoa powder, coffee, salt, a lil bit of baking soda (most of the rise comes from aquafaba already), and chocolate chips. Easy peasy. Glaze is just some powdered sugar, the leftover whipped aquafaba, some oat milk, and crushed freeze dried raspberries (the best way to get fruit flavor and color in glazes and frostings and such).

Cake interjection no 2! Lowk proud of this one. Recall the fig infused bourbon for a while back… so those bourbon soaked figs were sitting in my fridge for like 8 months and I was like ok I need to do sum w this. So I boiled them briefly and blended them w the spices they were infusing with and a little bit of water and it became a very loose fig butter. Something told me to make a cake so I did! Think banana bread but figs. Equal parts oil, white/coconut and brown sugars, vanilla, this entire jar of blended figs, almond and ap flour, baking powder, salt. That’s fr it . Glaze is a little bit of the extra blended figs mixed w powdered sugar and vanilla, topped w some almonds by @718.eats

Cake interlude- very last minute fudge-stuffed chai and vanilla bday cake! The cake part: equal parts avo oil, cane sugar, and coconut sugar. Then mixed in vanilla and a cup ish of very strong and very milky chai (boiled Kashmiri tea leaves with ginger, cardamom, and cloves in a very small amount of water then added boiled milk and some more masala black tea for extra measure). Then just flour, baking powder, tiniest bit of salt, and sprinkles! For the fudge layer: melted equal parts butter and chocolate chips, mixed with a tbsp flax egg, cocoa powder, and flour (just a couple tablespoons each). The glaze is some leftover chai mixed with powdered sugar and vanilla. And more sprinkles! Was yum hot but after being in the fridge.. even better somehow by @718.eats

Shail came to visit so obv we made loaded nachos
Highlight here is the cheese sauce . Usually use cashews but again BUDGETING and experimented so this was just soy milk, nutritional yeast, fresh jalapeño, and misc spices thickened on the stove. Got that artificial cheesy flavor we know and love by @718.eats

This my friends was my ride or die me this summer. One pot: started w beans bc they take longer, cooked w onion, garlic, and some lime, adobo seasoning and chili powder, added tomato sauce, rice and bell peppers, at times soy chorizo if I had it but highk was not necessary. Topped w avo, cilantro, maduros, and hella habanero salsa by @718.eats

Continuing the DC budget series!! Living large with a singular pan, knife, and very limited groceries. As such u will see a lot of the same ingredients…. But nonetheless we get creative! 
For the sauce, fried off the instant noodle spice packet and chili flakes in some sesame oil w onions and garlic, put some cabbage, added a lil teriyaki sauce and a tiny bit of pb and cooked down. Added boiled noodles n edamame by @718.eats

Work lunch noodles! Made these twice— first time cut rice paper for the noodles, second time bought them from china boy in dc (they have yum rice rolls and sell their uncooked noodles for a dollar).
Air fried some tofu that was marinating overnight. Sautéed onions, cabbage, lots of ginger. Sauce is teriyaki (the bottled one that’s mostly soy sauce, sesame oil, a little bit of pb (creaminess), chili garlic sauce, the leftover rice roll sauce from takeout lol, chili flakes, organic ketchup packet (trust), tiniest squirt of balsamic glaze (it was all I had). Gettin creative out here! by @718.eats

Gorg lil salad w some vegan goat cheese on sale at Whole Foods, red arugula, beets, roasted onions and pistachios with vegan honey, salt, and pepper, dressing is likely olive oil w mix of vinegars (red wine, white, balsamic) and seasonings. The beets were still warm out the oven which was so nice .. awesome mix of flavors n textures here by @718.eats

Hola a todos to apologize for not posting in nearly a month here is a VERY special Loisa receta feature 😇 divine meal. Shoutout pr

Habichuelas guisadas:

Sautee Sofrito (onion pepper and garlic) in olive oil
Add sazon, adobo, orégano +other seasoning if u want
One can of tomato sauce and a bunch of olives
Add beans w the bean water, then like half a can to full can worth of water back in
Salt and pepper to taste
Traditionally made also w pumpkin and potato if you want to add that in, it will help thicken the sauce
Add culantro if u got it or cilantro as a substitute not chopped j full, and then 3 bay leaves then cover and boil and then simmer and then j cook until its a good consistency and desired taste

Salsa criolla (what we put on the mofongo) is the same thing j w no beans basically! You can add some vinegar, water or white wine to add diff flavors n play w consistency.

Mofongo 
Slice up green plantains into a couple inches and fry at like 350 ish (or j use ur best judgement) until golden brown and a lil crispy on the outside but soft on the inside. Mash w garlic and add cold water to help w the consistency, vegan butter would also be good to add here and salt to desired taste and that’s it:)) by @718.eats

Capital ones new seasonal latte is blueberry ube but I did it first last month trust
Tbh this was on accident bc I just didn’t have enough of the things I wanted to use so had to sub half of the regular flour for mochiko n ended up making this blueberry ube mochi cake. Honestly delish. Ube comin from both jam and flavoring w frozen blueberries. Super fun texture and not too sweet !!! by @718.eats

This literally took 5 minutes !! Fried up leftover rice and frozen beef crumbles in sesame oil, added gochujang, soy sauce, cheese shreds, and pickled carrot/cabbage/onion combo I made earlier
