🫐Wholesome enough for breakfast. Decadent enough for dessert!

These Blueberry Detox Crumble Bars are low sugar, naturally sweetened, packed with oats + blueberries, and finished with fresh lemon. 💙

Save this recipe & tag @8020bakery if you make them!

🫐 BLUEBERRY CRUMBLE BARS

INGREDIENTS

Base + Crumble
• 1½ cups oat flour (gluten-free)
• 1 cup rolled oats (gluten-free)
• ¼ cup coconut sugar
• ½ tsp cinnamon
• ¼ tsp baking soda
• ¼ tsp salt
• 8 tbsp browned butter (or coconut oil for dairy-free)
• ¼ cup honey or maple syrup
• 1 tsp vanilla
• ¼ tsp almond extract (optional)

Blueberry Filling • 1 cup blueberries, fresh or frozen
• 2–3 tbsp honey or maple syrup
• Zest of ½ lemon
• Juice of ½ lemon
• Pinch of salt

👩‍🍳 HOW TO MAKE THEM

1️⃣ Prep: Heat oven to 350°F (175°C). Line an 8x8 pan with parchment.

2️⃣ Make the crumble: Mix oat flour, oats, coconut sugar, cinnamon, baking soda + salt. Add browned butter, honey/maple syrup, vanilla and almond extract. Mix until crumbly and slightly sticky.

3️⃣ Divide: Set aside ⅓ of the mixture for the topping.

4️⃣ Make the base: Add 1 egg to the remaining ⅔ and mix well. (Egg-free: use 2–3 tbsp nut butter or a little extra coconut oil.)

5️⃣ Press: Firmly press the base mixture into the prepared pan.

6️⃣ Make the filling: Mix blueberries, honey/maple syrup, lemon zest, lemon juice + salt. Lightly mash a few berries if desired.

7️⃣ Layer: Spread the blueberry mixture evenly over the base, then sprinkle the reserved crumble over the top.

8️⃣ Bake: Bake 35–40 minutes, until golden and the blueberries are lightly bubbling.

9️⃣ Cool: Let cool completely for 1–2 hours before slicing. This helps the bars set!

🍎 Okay… has ANYONE actually successfully made the applesauce marshmallow?! 😂

Because mine was an EPIC FAIL. So let’s talk about what applesauce does do well!

@reinventionqueenunfiltered will this due for your applesauce dilemma??? ⬇️

🥚 Egg replacer:
¼ cup (60g) unsweetened applesauce = 1 egg.
Great for cakes, muffins, quick breads & brownies where you want a moist, tender texture.

🍯 Sugar replacement:
You can replace 25–50% of the sugar by weight with applesauce. Keep in mind it adds extra moisture—which is usually a GOOD thing for cakes, muffins & other bakes you want nice and moist!

So… marshmallows ❌
Applesauce in baking? Absolutely. 😂🍎

Have you actually made the marshmallows successfully? Tell me what I did wrong! 👇

BROWNED BUTTER OAT FLOUR BANANA BREAD

A super-moist, gluten-free, naturally sweetened banana bread with rich browned butter, roasted nuts and dark chocolate. 🤎

Ingredients • 3 ripe bananas, mashed
• ¾ cup browned butter, cooled slightly
• ½ cup light/neutral olive oil or avocado oil
• ¼ cup brown sugar
• ¼ cup honey
• 2 eggs
• 2 tsp vanilla
• 2 cups oat flour (gluten-free)
• 2 tbsp cornstarch
• 1½ tsp baking powder
• ¾ tsp baking soda
• ½ tsp salt
• ¼ cup roasted, ground walnuts & almonds (or nuts of choice)
• ¼ cup dark chocolate chips

Method Whisk together browned butter, oil, brown sugar, honey, bananas, eggs and vanilla. Add the remaining ingredients and mix until combined.

✨ Let the batter rest for 20–30 minutes so the oats can absorb the liquid and the batter thickens.

Pour into a lined 9x5" loaf pan and bake at 350°F for 55–60 minutes, or until a toothpick comes out with a few moist crumbs.

The browned butter + light oil combination makes this loaf incredibly moist, while the roasted ground nuts add a beautiful depth of flavour. 🍌🍫

80% wholesome • 20% decadent • 100% delicious

***Gluten-Free High-Protein Banana Sheet Pan Pancakes** 🍌✨

**Ingredients:**
• 1 cup gluten-free 1:1 flour
• 1½ cups blended oat flour
• 3 tsp baking powder
• ¼ tsp baking soda
• 1 medium banana
• 3 eggs + 1 chia egg
• 1 cup Greek yogurt
• 1 tsp vanilla
• 1 tsp cinnamon
• ¼ cup ground walnuts
• 2–3 tbsp coconut sugar or cane sugar, to taste
• ½ cup water (plus more as needed)
• Optional: chocolate chips
• Optional: sliced banana or fruit, for topping
• Optional: syrup, for drizzling

**Directions:**
1️⃣ Make your chia egg: stir 1 tbsp chia seeds with 3 tbsp water and let sit 5–10 minutes until gel-like and thickened.
2️⃣ Preheat oven to 350°F. Line a 13x18" sheet pan with parchment.
3️⃣ In a large bowl, mash the banana, then mix in the eggs, chia egg, Greek yogurt, and vanilla until smooth — use a handheld mixer, stand mixer, or just a spoon and some elbow grease.
4️⃣ In a separate bowl, whisk together the gluten-free flour, oat flour, baking powder, baking soda, and cinnamon.
5️⃣ Add the dry mix to the wet ingredients along with the coconut or cane sugar, to taste, and combine until just mixed. Fold in the ground walnuts (and chocolate chips, if using).
6️⃣ Starting with ½ cup water, drizzle it in while mixing until the batter reaches a thick, pancake-like consistency. Add more water a tablespoon at a time if needed. Let sit 5 minutes.
7️⃣ Spread batter evenly onto the prepared sheet pan.
8️⃣ Bake 15–18 minutes, checking at 15 minutes. Let cool slightly, then slice into squares. Top with sliced banana or fruit and a drizzle of syrup, if desired. 🧇 by @8020bakery
