Having lived across four countries, Gaz Herbert brings a broad culinary perspective to Comal. His dishes are rooted in exceptional seasonal produce, shaped by an ever-evolving pantry of Mexican chillies and spices that pays homage to his birthplace.

Cibrèo Ristorante | When white tablecloths, an old-school setting, and convivial fine-dining setting suits the mood.

Trattoria La Casalinga | For fans of La Sostanza, Trattoria Cammillo et al, this is a mainstay in the little black book of all who love Florence and dine in her.

Alla Vecchia Bettola | Famous for its tomato-vodka pasta, this is a hot and heaving bolthole that is always a full-on cantine-style Florentine immersion.

S.Forno | Some of the best sweet and salty baked goods in the city by the sister to the Il Santo Bevitore restaurant.

Enoteca Pitti Gola e Cantina | One of the chicest and most low-key places to make a new acquaintance — of the vino variety.

Betty Soldi Studio | A secret garden, ‘limonaia’, in the center of the city where master calligrapher and artist Betty holds one-of-a-kind workshops that take you away from the everyday, by appointment.

Rothko in Florence | The exhibition of the year is on until August 23 — try and catch the master of American modern art the exquisite Palazzo Strozzi.

The MAD | The Murate Art District is a former prison turned art and culture hub, well worth a visit to marvel at its transformation alone. This summer, Bruno Casini and Valentina Gensini curate Florence Calling, a celebration of the city in the 1980s.

Collegio alla Querce, Auberge | A short taxi ride up the hill to this former boarding school turned luxury hotel provides the best views across the city, the most sublime suits and a restaurant — La Gamella — exalting Tuscan classics.
