Seekh Kebab Quesadilla 🌮🍢 recipe 👇Comment 'Grill' to get the pan I used 🙌Deets (makes 7):Filling: 440g minced chicken105g onion, finely chopped 12g ginger10g garlic2 large green chillies, chopped 10g fresh coriander 8g fresh mint15g melted butterDry spices:¾ tsp cumin powder½ tsp chilli powder 1 tsp coriander powder ⅓ tsp garam masalaSalt to tasteQuesadillas:7 homemade tortillas (leftover roti also works)Grated cheese 1 tsp oil to grill- Mix all the mentioned ingredients for the filling and dry spices in a large bowl. Chill in the fridge for 30 mins. You can also batch prep this ahead of time in the fridge.- Spread a generous amount of meat filling halfway on a tortilla. Put some cheese. Do you like Paratha (reshmi) Chicken Burger? 🥀Deets:Paratha:250g all-purpose flour 125g warm water¼ tsp salt1 tbsp oil in total - Distribute ½ tbsp oil and salt evenly in flour.- Gradually add water and knead to make a soft dough. Rub the remaining oil on top of the dough. Cover and rest for 5-6 hours.Pattie:310g minced chicken thighs10g ginger10g garlic2 large green chilli20g cashew25g processed cheese1 tsp black pepper ⅓ tsp cumin powder⅓ tsp coriander powder ¼ tsp garam masala5g finely chopped coriander leaves Salt to taste2 small pieces of charcoal + 1 tsp of ghee for Dhungar- Blitz ginger, garlic, chilli, cashew with a little water.- Add all the dry spices, cheese, coriander leaves, spice paste to the chicken. Mix really well.- Heat charcoal until ashy. Put a small DIY bowl made of aluminum foil inside the meat. Place the hot charcoal in the foil. Add ghee. Once the smoke starts to release, cover the meat bowl immediately. Rest for 2 hours.Green chutney dip:Chutney:40g coriander leaves 20g mint leaves (no stem)9g ginger1 large green chilli½ tsp salt1 tbsp lime juice5-6 ice cubesDip:100g greek yogurt 2 tbsp green chutney ⅓ tsp chaat masala- Blend all the mentioned chutney ingredients until smooth.- Mix 2 tbsp of that chutney with yogurt and chaat masala. The dip is ready.Pickled onion:120g onion, super thinly sliced120g water80g apple cider vinegar 24g sugar⅓ tsp salt- Heat water, vinegar, salt, and sugar mix until small bubbles appear. - Pour that hot liquid on sliced onion. Cover and rest for hours atleast. Or let it come to room temperature, then pickle in the fridge for 24 hours before use. Burger:- Make parathas as shown in the video. 48g each doughballs. Use 2 such parathas for one burger. Fry then on medium heat until golden brown and crispy on both side.- Cook chicken pattie 2-3 mins each side on high heat as shown. 50g each pattie. Use 2 such patties for one burger. - To assemble, take one paratha, and add a spoonful green dip. Then put 2 pattie. Different moods, different cravings, different dishes - all made in OneChef. Impossible pairing test went super smooth. I'm impressed 🫡Veggie Khichuri:1. Turn on Philips OneChef. Select Curry mode and then the preset Veg.2. Heat 1 tbsp mustard oil. 3. Add 65g chopped carrots, 100g cauliflower, 35g tomato. Sauté for 3-4 mins.4. Add 60g each soaked short grain rice and moong dal.5. Season with ½ tsp ginger paste, ¾ tsp turmeric, 3 slit green chilies, ½ tsp cumin powder, ½ tsp sugar, and salt to taste.6. Add 800g hot water, cover the glass lid, and let it cook.7. When the rice and dal are 80% cooked, add 45g frozen peas and 100g diced tofu. Keep cooking until done.8. Finish off with ½ tsp ghee and ¼ tsp garam masala. Chocolate fudge cake:1. Whisk 270g chocolate cake mix, 200g hot water, 80g oil until smooth.2. Add 25g chocolate chips and fold into the batter.3. Make a toppings by mixing 15g brown and white sugar each and a tsp of coffee.4. Pour the cake batter on a cake tin, and sprinkle the topping mix evenly on top. And then pour 150g hot water. 5. Turn on OneChef on Airfry cake mode with the airfrier basket inside. Put the cake tin in. Close the soft touch lid. Bake at 170°C for 25 minutes. 6. Do you like Moghlai Porota? 🥀✨️Chicken Keema Moghlai Porota ✨️Deets:Dough:205g maida (all-purpose flour)105g warm water¼ tsp salt2 tsp oil104g each doughballs (equally divided into 3 balls)- Season flour with salt. Distribute a tsp of oil evenly. Add water and knead a soft dough. Rub another tsp of oil on top. Cover and rest for 6-8 hours.Chicken keema:145g minced chicken10g ginger, finely chopped 10g garlic, finely chopped 1 tsp black pepper, freshly ground 8g coriander leaves, finely chopped ½ tbsp lime juice75g water2 tsp mustard oil - Mix chicken keema with water in a bowl. - Heat oil in a pan on high heat. Sauté ginger, garlic. Add watered chicken. Vigorous stir to prevent big lumps. - Season with salt and pepper. - Once the water dries out, add lime juice and coriander. Mix well. Set aside.Breadcrumbs:3 slices of bread 170°C for 8-10 mins- Blitz bread slices into a semi-coarse powder.- Bake or airfry the breadcrumbs mixing in every 2-3 mins until evenly golden and toasted. Moghlai Porota:1 doughball1 egg1½ tbsp cooked keema35g onion, finely chopped 1 green chilli, chopped½ tsp turmeric ½ tsp Kashmiri chilli powder 1 tsp crushed peanuts 1½ tbsp breadcrumbs ¼ tsp saltRefined oil for frying - Roll the doughball super thinly on a well greased surface. You can see the counter through it. Fold left and right part of the dough 1½ inch to the center. - Mix all the mentioned ingredients for the filing in a bowl very well. Spread this mixture in the center of the porota, making a rectangular shape.- Fold bottom and then top part of the dough to seal the porota. Pinchleft and right sides well to seal the porota well.- Transfer the porota immediately on hot oil seam side down. Fry it on MEDIUM heat splashing oil on top.- Fry on both sides until golden and crispy. Drain excess oil.
