@griz thank you for creating @sevenstarsfest. This was one of the best weekends ever in my life. I laughed, I cried, I smiled so much, I danced. I felt free. I brought back #dadhugs and I'm so happy I did. So many people I shared my love with that were so grateful for me being there. Special shout-out to my bestie @mamaspideygwen for inviting me to this festival. I can't wait to be back next year. This people were simply incredible by @_damnit_greg_

I have had my eye on Duck Breast for 6 months now at Fresh Market. I had the opportunity to cook it for myself tonight. Being a foodie and watching so many cooking shows I always find inspiration in watching them.

This was labor intensive and took 2 days of shopping to decide what I wanted to go with the Duck Breast. I did quite a few small things I have picked up from the shows (removing the germ out of the center of the garlic clove being one, reduces bitterness) that I probably won't go over because if I write it all out. It would be a novel.

Seared and Roasted Duck Breast (It was wrapped in apple wood bacon for the oven portion)

Roasted Garlic Parsnips (rendered duck fat was used as well as butter and almond milk)

Hard Seared Bacon Fat Baby Broccoli (used a cast iron pan to press the broccoli down for fast caramelization and to leave a crunch)

Baby Bella Mushrooms with Caramelized Minced Onion rendered in Duck Fat.

Orange Fig Sauce that had minced bacon, more caramelized onion and a touch of red wine vinegar.

Plating has never been my forte but I tried. This dish came together beautifully and is incredibly well balanced. I'm damn proud of this.

The Boys saw this truck on Wednesday night at Texas Roadhouse and thought it was the COOLEST truck ever. I made a post on Facebook in Living in Lynchburg and found out who the owner was. For years I thought it was a crime that Corporations were allowed to use artificial colors and ingredients here in America when the entire EU banned those same companies from doing that overseas all in the name of profit. As corporate greed has reached an all time high, to see this now come through as a 'main line' or 'high priority' policy is almost laughable. (I also find it funny that when Michelle Obama wanted to do this the Conservative right was in an uproar, but now that white men have pushed this idea it's cool, that's a conversation for another day though)

Can someone with an economics degree or anyone who took economics, please explain to me that because now that President Elect Trump is incoming; The corporations (some of his best friends in the 1% elite) who own Congress, are now all of a sudden going to change their ever increasing profit shares for this? They are going to *want* to make less money? Will this lower food costs or raise food costs? Seems to me chemicals and artificially made things are cheaper than the 'real' stuff.

If the conservative right/ Republicans are all for downsizing government and having the government not be able to tell you what to do, if RFK and President Elect Trump put together a mandate and push an executive order to ban artificial stuff and to 'Make Food Healthy Again', isn't that a massive overreach of the government that you don't want to have a lot of power? Or will this just be another 'Politicans lying just to get into office and fooled their constituents' ?

I am asking genuine questions and not looking for smart ass or snide remarks with this post. I want genuine healthy discussion. by @_damnit_greg_
