Homemade pasta with chilli, tomato and ricotta cheese sauce. Shout out to the chef at @celinosglasgow for his tips, tricks and flour recommendations

The PASTA
1x egg to 100g flour per portion - make sure the semolina flour is semolina rimacinata.

Create a volcano with the flour and crack in the eggs. Give those hands of yours a workout and knead to a smooth dough. Add a splash of water 💧 if dough starts to feel dry. It does take time but the dough will come together to a smooth consistency.

Let it rest for 30min.

Time to roll your pasta and cut to your desired shape - we used the @kitchenaid_uk pasta roller and cutter to create some spaghetti

The SAUCE
1. Brown onion x1 🧅
2. Red chilli x 1 (add more if you like it spicy) 🌶️
3. Garlic x 4 cloves 🧄
4. Herbs - oregano, thyme, rosemary (eye ball it or a teaspoon of each) 🌿
5. Piccolo tomatoes (8-10 quartered) 🍅
6. Passata - small carton 🍅
7. Red wine - a good splash 🍷
8. Sugar - a pinch to cut the tomato acidity 👌🏼
9. Ricotta cheese - a good dollop (tablespoon)🧀

Simply brown the onion, add garlic and chilli for a minute or 2, throw in some herbs, add the tomatoes and passata. Splash in the wine and add some sugar then simmer for 15-20min. Once cooked add the ricotta cheese give it a good mix and add in your homemade pasta once boiled for 3-4mins

Don’t forget to season with some salt🧂

Keep veggie or add some chicken 🐔 , beef 🥩 or prawns 🦐

An aromatic midweek treat 🦆. Solid attempt at the pancakes was an added bonus. Another one to the repertoire. Enjoyable @neff_home
